I love the holidays and one of my favorite things to do is to bake fun sweets for my families and friends. One of my favorite places to shop is at WinCo. I can get everything I need there and I especially love their bulk bins. I recently took a little trip there to get some ingredients to make some yummy treats. My main ingredients were two brands I love to make recipes with, Betty Crocker and Chex. Baking holiday sweets is one of my favorite things to do and Betty Crocker is a brand I love. The first recipe I would love to share with you is this delicious Sinfully Sweet Chocolate & Cream Cheese Cake using Betty Crocker Devil’s Food Cake Mix. This is the perfect dessert for a holiday crowd. It’s not that hard to make, it looks AMAZING, and it tastes even better!

Ingredients

Chocolate Cake

• 1 box Betty Crocker Super Moist Devil's Food Cake Mix (mix according to instructions on the box).

Cream Cheese Frosting (for the filling and garnish)

• 1 cup cream cheese

• 3/4 cup butter

• 1/2 Tablespoon vanilla

• 6 cups powdered sugar

Beat the cream cheese and butter with an electric mixer at medium speed for about one minute. Add vanilla and beat for another minute. Reduce the mixing speed to low and slowly add powdered sugar (I add about 1/2 cup to 1 cup at a time). Once the sugar is completely added, beat at medium speed for about 2 minutes or until fluffy.

Chocolate Buttercream Frosting

• 1 cup butter

• 1 & 3/4 cups cocoa

• 6 cups powdered sugar

• 1/2 cup + 3 Tablespoons milk

• 2 teaspoons vanilla

In a large bowl, combine the powdered sugar and cocoa powder. In your mixing bowl, place the one cup butter and beat the butter with an electric mixer at medium speed for about one minute. Change the mixing speed to low and slowly add the powdered sugar/cocoa mixture about 1/2 cup at a time. Halfway through this process, add the milk and vanilla. Once everything is mixed in, beat at medium speed for about 2 minutes or until fluffy.

Instructions

Preheat oven to 350 F degrees.

Mix the Betty Crocker Devil's Food Cake Mix according to the instructions on the box.

Spray three 8-inch round cake pans with non-stick cooking spray. Evenly divide the cake batter between the three pans and bake according to instructions. Stick a toothpick in the center of the cake to test if it's done. If the toothpick comes out clean, then it's ready. If it has cake batter on it, then continue baking.

Allow the cakes to cool for at least 10 minutes before dumping them out of the pan and onto a wire rack to cool completely. Once they are cool, transfer them to a flat plate or pan that is covered with wax paper. Freeze for at least 2 hours. This will make it easier to frost.

While the cakes are freezing, make the frosting as indicated above.

Put a little bit of frosting on the cake plate so that it will hold your cake and keep it from sliding. Then place your bottom layer on top of it. Add a good heaping of the Cream Cheese Frosting and spread it around on just the top part of the cake so that it's nice and even.

Add the second cake on top of the bottom cake and once again put cream cheese on top of the cake and spread so it's even.

Put the last cake on top and then spread the entire cake in the Chocolate Buttercream Frosting. Use a metal spatula and a cup of hot water (dip the spatula in the hot water) to smooth the frosting out.

Garnish the cake with the Cream Cheese frosting using a pastry bag and tip. I also like to add some chocolate chips on top or you could use something else as a fun garnish such as Christmas sprinkles or candies, cherries, etc.

Notes

This does make a LOT of frosting, but you can refrigerate any leftover frosting in an airtight container. I like to have frosting on hand for other baking projects or another fun treat is just putting frosting between graham crackers!

The second recipe is kid friendly and great for holiday parties, neighbor gifts, class parties, and just about any time. It’s also a fun project for the kiddos to help you with. It’s Reindeer Cupcakes using Betty Crocker Yellow Cake Mix.

o Chocolate Frosting

o White Frosting

o Mini Chocolate Chips

o Mini Vanilla Wafer Cookies

o Mini Pretzel Twists

o Chocolate Ball candies such as Whoppers.

Instructions

Mix the cake mix and bake according to instructions and make 24 cupcakes. Let cool completely (or freeze for a few hours to make frosting easier) before frosting.

Frost with chocolate frosting.

Put 2 small pretzel twists on each cupcake to look like antlers.

Put a mini vanilla wafer cookie near the bottom of the cupcake. Put a little bit of frosting on the cookie and add a Whopper/chocolate ball candy for the nose.

Put two little dabs of white frosting and a mini chocolate chip in the center of each white dab to make eyes. There are already made eye candies that you could buy instead of this...they are usually found in the baking section.

Ingredients

o 9 cups Rice Chex Cereal

o 1 cup chocolate chips (I prefer milk chocolate, but you can do whichever kind you like)

o 1/2 cup peanut butter

o 1/4 cup butter or margarine

o 1 teaspoon vanilla

o 1 & 1/2 cups powdered sugar

o Red or green sprinkles (or both)

Instructions

Put 9 cups Rice Chex in a bowl and a set aside.

Place the chocolate chips, peanut butter, and butter in a microwavable bowl and microwave on High for one minute. Stir and if needed, microwave for about 30 more seconds. Once the mixture can be stirred smooth, stir in the vanilla. Pour the mixture over the cereal and stir until it's evenly coated.

Pour the cereal into a 2-gallon resealable food-storage plastic bag and add the powdered sugar and sprinkles. Seal the bag and shake until the cereal is well coated.

Spread onto wax paper to cool. Then put the cereal in a container and stir-in your red & green candies. To store, place in an airtight container and store in the refrigerator.
