4 lobster tails
FOR CITRUS BUTTER
1 cup (2 sticks) unsalted butter
2 tablespoons lemon juice
1 tablespoon lime juice
2 teaspoons fines herbes
2 teaspoons frozen orange juice concentrate, thawed
1 teaspoon salt
1. Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking. Using kitchen shears, split lobster tails in half lengthwise. In a saucepan, melt butter over medium-low heat. Skim foam. Stir in lemon juice, lime juice, fines herbes, orange juice concentrate, and salt. Measure 1/3 cup for basting; set aside remaining butter mixture.
2. Brush meat of lobster tails with some of the 1/3 cup Citrus Butter. Place lobster tails, meat side down, on hot oiled grill. Cook for 2 to 3 minutes. Turn shell sides down. Brush with the remaining portion of the 1/3 cup Citrus Butter. Cook for 6 to 7 minutes more or until lobster is opaque and cooked through. Do not overcook. Serve hot with remaining Citrus Butter.
