Be prepared for these vegan protein bites to disappear quickly because they are delicious! If you would like to freeze them, don’t add the toppings and freeze on a baking sheet before transferring to a freezer-safe container.

I usually soak the nuts and dates overnight, but you can speed up the process by soaking them just for an hour. However, you may need to add a bit of water after processing to get the correct consistency.

Chocolate Vegan Protein Bites

Ingredients

2 cups dates, pitted and soaked for an hour

1 cup almonds, walnuts, cashews or a mix, soaked overnight

½ cup shredded coconut, unsweetened

2 tbsp coconut oil, melted

1 tbsp chia seeds

3 tbsp cocoa powder

Chopped nuts

Coco powder

Instructions

Place the nuts that you would like you use in a bowl and cover with cool water. Let soak for at least an hour. It is fine to soak them overnight.

In a separate bowl, do the same with the pitted dates.

Drain the nuts and dates thoroughly.

Add the nuts to the bowl of your food processor and blend until ground.

Add the dates, coconut, coconut oil, chia seeds, cocoa powder, and salt. Blend well until a thick dough forms. Depending on how long your nuts and dates soaked, you may need to add a bit more water.

To form the bites, roll the dough mixture into 1 tbsp sized balls, and place on a baking sheet. If the dough becomes too sticky to roll into balls, place it in the fridge or freezer for a few minutes. Wetting your hands may help, too.

Roll in favorite toppings and store in a container in the fridge.
