Well I have to admit that we did give up our beloved french fries for a while when we first went Paleo. Then, I started reading article after article that potatoes were okay to consume if you did it right and didn’t consume them every day. So, homemade french fries made their way back into our rotation as a treat! We also alternate the white potatoes with sweet potatoes, although those do not have the same crunch. I made them healthier by frying them in coconut oil and using real sea salt for added minerals. The kids love them and I almost always make them on nights when my husband is out of town for work as a the-kids-will-always-eat-these meal. Mom approved!

Ingredients:

5 large organic russet potatoes (you can even use sweet potatoes)

Coconut oil for frying (about 1 cup, more or less depending on the size of your pan) — where to find

Sea salt

Directions:

Peel and rinse the potatoes

Then cut them into french fry sticks using this handy tool (definitely one of my favorite fun kitchen gadgets, and impulse kitchen tool purchases!)





You can also hand slice them into sticks, but it takes quite a bit longer

Place them in a large bowl and cover with cold water, I add ice — this removes extra starch and makes them even crispier

Allow them to soak, 2 to 3 hours (I have even been known to allow them to soak overnight, when I accidentally ran out of coconut oil to fry them in!)

Drain the fries and dry them on a kitchen towel

Heat the coconut oil over medium heat in a large skillet (you will want a skillet that is deep) until you have about 1/4″ of coconut oil in the pan

If you want to have ultimate temperature control you can use a kitchen thermometer and heat the oil to 300°F

I test the oil by dropping in a small fry and if it really sizzles then you are ready

Drop enough fries into the pan (be very careful of oil splattering on you) so that you evenly cover the bottom, not too much so that they pile on top of eachother

Cook them for about 5 minutes, turning them with a spatula once

I cover them with a splatter screen while they are cooking

Remove from the oil and drain on a paper towel

Turn the heat up to medium-high (or 400°F)

Add the fries back into the oil and allow them to cook until they are nice and brown and crisp!

Remove from the oil, drain on paper towels, and sprinkle with sea salt

Serve with your favorite dipping sauce, we prefer ketchup or homemade ranch dressing
