Hi! I’m Meme and I’m a registered dietitian nutritionist and writer of Living Well Kitchen. My life goal is to help people realize that having a healthy lifestyle can be enjoyable and delicious. I’m a vegetable and fruit junkie, and I love rambling about my daily experiences in my teeny tiny outdated kitchen and life in New Orleans.

I had the pleasure of meeting Meme at Blog Brûlée. I asked Meme a bunch of questions and learned the inside scoop of her journey to becoming a Registered Dietitian.
Where did you attend school for your undergraduate studies? What was your major?
I got my undergraduate degree from University of Alabama (roll tide!) in Food and Nutrition.
Where did you attend your dietetic internship?
University of Alabama at Birmingham (UAB) is where I attended my dietetic internship. It’s a 9 month internship where you attend classes on Mondays and work Tuesday through Friday {usually}. After you finish the internship, UAB offers the option to finish getting your master’s while working in a traineeship. I took this option since I had already gotten 12 hours during my internship.

How long have you been a Registered Dietitian? Do you hold any other certifications/degrees as well?
I’ve been a registered dietitian since October of 2010. I have a master’s in Clinical Nutrition. I am also a certified holistic health counselor and am currently working to become a certified intuitive eating counselor.
What is your job title(s)?
I’m a registered dietitian nutritionist and owner of my own private practice, Living Well Nutrition. Since I’m my own boss, I have lots of job titles — dietitian, grocery shopper, chief recipe developer, meal taste tester, food photographing & social media novice.
What is your favorite part about your job?
Oh lots of things!! I love the freedom I have in my job and the fact that it is rarely the same thing every day. Some days I focus more on my blog and on recipe development; other days I focus more on my clients. I think my very favorite thing about my job is the moment where I help spark the excitement of a healthy lifestyle in someone, whether it be from a blog post, a recipe, or an interaction with a client.
What is your food/nutrition philosophy?
I focus on nourishing our bodies with real food. Eating high quality food that provides your body with energy is much more important to me than eating processed diet foods that “help you lose weight.” I think every person is different so I do not believe that one specific diet or way of eating works for everyone. I find it’s important for people to explore what works best for their bodies dependent upon their lifestyle and where they are in life.
What is your healthy meal to cook?
My favorite healthy meal to cook is one that doesn’t scream “diet” — something that is full of veggies with some lean protein with delicious spices that makes me feel satisfied. I love a good stir-fry or a meal where veggies are the main focus. I just made some stuffed bell peppers that I’ve been drooling over all week.
