 We are celebrating National Nutrition Month here at RDelicious Kitchen. I shared my journey to becoming a Registered Dietitian (Part One, Two, & Three) and opened the blog world “floor” up to other RD’s to share their journey.



Hi everyone. My name is Liz Weiss, and together with fellow dietitian and “Meal Makeover Mom,” Janice Bissex, I founded MealMakeoverMoms.com, a website where busy parents can find healthy recipes and practical tips for feeding their families a super-nutritious diet … even when they have picky eaters at their table. I have a blog called, Meal Makeover Moms’ Kitchen and I co-host Cooking with the Moms, a radio podcast on iTunes. (The podcast has been “on the air” since 2008, and we’ve recorded over 260 episodes to date.) I’ve written two cookbooks, No Whine with Dinner and The Moms’ Guide to Meal Makeovers, and I also host, “Meal Makeovers,” a cooking segment which runs on AccentHealth, CNN’s doctor’s office channel. Oh, and I also created the mobile recipe app, Meal Makeovers, filled with over 75 makeovers of family favorites. I’m a mom of two teenage boys, and I live in Lexington, MA, a suburb near Boston.

I had the pleasure of meeting Liz at Blog Brûlée. I asked Liz a bunch of questions and learned the inside scoop of her journey to becoming a Registered Dietitian.

Where did you attend school for your undergraduate studies? What was your major?
I attended the University of Rhode Island where I majored in Nutrition and Dietetics. I graduated from URI in 1982.

Where did you attend your dietetic internship?

I interned in Portland, OR at the Oregon Health Sciences University.

What study materials did you use to study for the RD exam?

I hate to admit this, but since I took my RD exam in 1983, I really don’t remember!

How long have you been a Registered Dietitian? Do you hold any other certifications/degrees as well?

I’ve been a Registered Dietitian since 1983. I also have a master’s degree in Nutrition Communications from Boston University, and I attended the Cambridge School of Culinary arts in 1998 where I completed the Professionals Chef’s Program.

What is your job title(s)?

I’m the managing editor of MealMakeoverMoms.com.

What is your favorite part about your job?

I love to cook, so I’d have to say that the best aspect of my job is creating healthy, family-friendly recipes which I then get to share on my blog and via social media. Throughout the year, I also get to turn many of those recipes into cooking segments for CNN AccentHealth, which runs in over 30,000 doctor’s office waiting rooms nationwide.

What is your food/nutrition philosophy?

I’d never tell someone to give up their favorite foods. Instead, I have a “meal makeover” food philosophy where I take favorite family recipes and tweak them until they’re healthier and just as delicious as the originals. I don’t like to take ingredients away—though I do strive to cut things like sodium and saturated fat; instead, I add healthful ingredients like whole grains, fruits, vegetables, and good-for-you fats to everything I make.

What is your healthy meal to cook?

My healthy, go-to meal favorites change with the seasons. In summer, I love to make Wild Rice Salad; in winter, my Peanut Butter Chickpea Soup is always a winner; and every Sunday night, we tend to make fish tacos!

What is your blog and how did you get started blogging?

My blog is called, Meal Makeover Moms’ Kitchen. I started it in 2007 as a way to share healthy family-pleasing recipes, my food and nutrition adventures, and tips and tricks for parents searching for new ways to feed their picky eaters.
