This is truly a guilt-free pleasure.  This  Low-Fat, Raw Vegan Apple Pie is a beautiful and visually appealing dessert – perfect for any occasion. This is a great dessert to make if you are new to the low-fat raw vegan lifestyle and you’re looking to make something a little more creative or want to make this for someone else new to this awesome way of eating. We served this raw food dessert this past week to several of our guests doing our Living Foods Lifestyle Program after attending an afternoon of workshops. It was definitely a hit and lucky for us, we had plenty of leftovers to eat it for breakfast the next morning!

Low Fat Raw Vegan Apple Pie

This apple pie is super easy and fun to make. It’s also low in calories, has zero cholesterol, is high in fiber and pectin, and is deliciously juicy.

Essential Kitchen Equipment:

To get an extra thin slice on the apple, I use a mandoline slicer. Please be careful using thisessential raw food kitchen tool. My mandoline is easily the sharpest tool in my raw food kitchen. You can also use a slicer blade on your food processor if you have one. Besides a tool for slicing the apple very thin, you will also need a high powered blender or if you only have a food processor, that would work fine as well. I also used a 9 x 9 square pie spring form, but any size would work. Choose what you would like to make the pie in, and gauge ingredients accordingly.

Raw Ingredients:

About 15 organic red apples

For the Filling:

There are a number of ways that you can make a filling to layer between the apple slices. In this recipe I used mamey sapote:

About 6-7 large bananas

Mamey Sapote

5-6 dates

Cinnamon spice and vanilla extract to taste.

Process all ingredients in a blender until smooth.

If you don’t live in the tropics or have access to mamey sapote, no worries, you can easily skip this fruit and just make a banana, date, cinnamon blend with a dash of vanilla. Another way you could make it, is by adding about 1 cup of raw, organic dried goji berries. This would make for an awesome taste, color and texture.

Goji Berry Filling:

About 6-7 large bananas

1 cup of goji berries (soaked in coconut water or pure water for about 15 minutes before hand. No need to add the water into the mix, that would make it too liquidy)

5-6 dates

Cinnamon spice and vanilla extract to taste

Process all ingredients in a blender until smooth.

Place a thin layer of apple on the bottom of the square pan or springform and layer it with a thin layer of  your sauce creation of choice. In this recipe, we did about 20 layers of apple and it turned out looking quite beautiful, not to mention the delicious blending of the apple and cinnamon flavors. We served this

You can also place your tray in the dehydrator for an hour to warm before eating, which is also quite nice.
