Good morning! Welcome to Wednesday. Everyone in our house has come down with a nasty cough, ugh. I think I”ll be making some chicken soup today. We’ve been so lucky not to get the stomach bug this year – so I won’t complain about a head cold/cough. I am running a bit behind this morning.
Yesterday I made a couple whole crockpot chickens – to test out some different recipes – both turned out delicious! For the first one, I cut onions in half and laid them in the bottle of the crockpot. Then after cleaning up my chicken (remove giblets, rinse, pat dry), I covered it with a package of taco seasoning – rubbing it into the skin. Place chicken on onions and cook on low for 6-8 hours. It came out with a *hint* of taco flavoring – would be great to shred for enchiladas or taco soup! The other chicken was done with an italian blend, resting on carrots and celery. I’ll share these recipes later this week – but it’s such an easy way to make a moist chicken! We shredded the chicken and served it over rice, with steamed vegetables. Try to find whole roasters priced at $0.99/lbs or less – my favorite is when they drop to $0.88/lb or $0.79/lb – but that’s not as common these days
Thank you to everyone who took my survey - we got so many responses – and I”m grateful for the input and feedback. We closed the survey last night and we’ll be compiling the results this week.
One thing I want to improve this year is my site performance – in terms of the technical side of things. On very popular posts my current server just hasn’t been able to keep up. We’ve had random errors, caching problems and complete crashing of the server. So hopefully TONIGHT we are moving the Queen Bee site to a better and more robust server solution. You probably won’t even notice a difference, but I wanted to give you a heads up in case we have some hiccups with the transfer. I have the best IT guy so I bet it will be seamless, but wanted to give you a heads up anyway. There is something called a DNS – which is the switch that will happen when we move to another server – and it will tell your computer browser to go to the new server for my site. This switch can take anywhere from 2 hours to 48 hours – so if the site seems a bit stale over the next couple days – don’t despair – the DNS switch will happen eventually and you’ll be seeing the “new site” on the new server. The 48-hour timeline might be for those of you live in smaller, more rural towns. Be patient – it will be worth the switch (I hope).
