Good morning! How is it going today? Today is a beautifully sunny day near Austin, Texas. I’m thinking of all my readers in the gulf coast area and in Florida – this storm system that passed through was nasty!
Yesterday we went for a little hike to some waterfalls in the area and ended the day with a big ole local Austin barbecue feast with 4 other full-time traveling families. The barbecue was delicious and it was fun to have the kids running around exploring together.
Not every day on the road is as awesome as yesterday. It’s not all waterfalls, campfires and barbecue. I wrote a post over on our travel blog about probably the most stressful week we’ve had on the road. It included a repair, flooded campsites, fire ants and even tornadoes. We have been eating a lot of baked potatoes lately – they are so easy and you can top them with all sorts of things from the fridge. Some of our favorite toppings :: sour cream, cheese, chili, black beans, olives, bacon, fried onions, sautéed mushrooms, salsa . . . you can add all sorts of goodies. Here is a recipe for making slow cooker baked potatoes – pop them in when you wake up and they’ll be ready for dinner!
