It’s Monday.

And I’ve got dinner on the brain!

Easy weeknight dinners, that is. If you’ve been around here long enough, then you know that simple recipes are the name of my game. From desserts, to side dishes, breakfasts, and dinners, the easier (and delicious!), the better. Are you the same way, too?

Life can be hectic, especially during the week! And the last thing that I often feel like doing is preparing an elaborate meal for dinner. Especially after recipe testing all day for Pumpkin ‘N Spice. I need my meals to be simple, fresh, and easy to prepare.

Like most of my recipes, this dish is a breeze to whip up! But, you knew that was coming, right? To start, you’ll cook the fettuccine noodles according to the package directions, then drain and set aside. Add the Bertolli® Creamy Basil Alfredo and heat until warmed.

To grill the shrimp, I used my handy dandy grill pan. But, if you prefer a regular gas grill, feel free to use that instead. Simple grill the shrimp over medium heat until pink and cooked through. Add the shrimp to the pasta and then toss to coat. And that’s it!

Serve this Grilled Shrimp Alfredo Pasta with a dash of fresh parsley and some garlic bread, if desired. Your weeknight meal just got so much easier, and delicious!

Grilled Shrimp Alfredo Pasta

Ingredients

8 ounces fettuccine noodles

2 tablespoons olive oil

1 pound shrimp, peeled and deveined

1/2 teaspoon garlic powder

Salt and pepper, to taste

1 jar Bertolli® Creamy Basil Alfredo

Fresh parsley for garnish, if desired

Instructions

In a large skillet, cook fettuccine noodles according to package directions until al dente. Drain and set aside.

Heat a grill pan (or gas grill) to medium heat.

Add olive oil and shrimp. Season with garlic powder, salt, and pepper.

Cook for 3-4 minutes on each side, or until heated through and pink. Set aside.

Add Bertolli® Creamy Basil Alfredo to cooked noodles, along with shrimp.

Cook for 2-3 minutes over low heat, or until warmed through.

Serve immediately and garnish with fresh parsley, if desired.
