Rhubarb season is here, and I am excited try some new recipes. When most people think of rhubarb, they think of strawberry rhubarb pie. While the two pair well together in a pie, and it is the classic way to eat the vegetable, there are so many other kinds of rhubarb recipes from soda to spreads and everything in between!
How to Freeze Rhubarb
Freezing rhubarb is simple. It can be thawed for later use and can be used for jams, sauces, pies and more! To freeze rhubarb, wash it and peel it from it’s thick skin if yours has some. To freeze it quickly, and make it easy to use, I recommend cutting it into small pieces about 1 inch or so in size. Place them on a single layer on a cookie sheet and freeze until totally frozen and put into bags that are perfect for the recipes you will be using them in. Quart sized bags work well.
If you won’t be using it for a couple of months, you should blanch the rhubarb before you freeze it. This will help keep the flavor longer.
