If someone had of said to me I’d be making raw versions of some of my favourite foods that have heaps of flavour, incredible textures and that I would quite happily indulge in them over their cooked counterparts a year ago, a few months ago even….well I wouldn’t have believed it. I’m a big fan of cooked food. Pancakes, roasted pumpkin vegetables, banana bread, instant bakes, whipped oats…but to name a few.

Before I even begin to share some of the raw meals I devoured yesterday let me start by saying I have no intention or desire to start eating 100% raw. I merely like the challenge of creating raw meals and the time saving element quite excites me.

I also will be a seeing a new client from next week who would like to start incorporating more raw food in to her diet so I decided I’d kill to birds with one stone and get some experimenting done which turned out successfully much to my palate and tummy’s delight

So here we go, another hump day, another What I Ate Wednesday! In case you missed my post the other day I shared my top ten tips for creating healthy habits and sticking with them.

So not all of the food I made my way through yesterday was raw but a good 70% of it was and I was 100% satisfied on all counts. What I noticed was how much more intense the flavours were and of course the textures. Lots of crunch and chew…however the day started with a bowlful of raw creaminess…

Mango ginger and mint softserve!!!



Coconut extract, fresh ginger, mint and crystalised ginger through it for a bit of a spicy chew…and then I toasted some coconut and it was transformed in to an “almost” raw bowl of softserve   Recipe will be up tomorrow morning!

And then I had some of this truly life-changing bread that I’ve been experimenting with the last couple of weeks. I’ve officially made it through 3 full trays single-handedly and I’m 100% converted, head over heels in love with it! It’s my take on Angela’s (Oh She Glows) Endurance bread…

I had a couple of slices, toasted from a fresh batch out of the oven earlier in the morning one topped with peanut butter and black cherry jam, the other with some ripe melt in the mouth avocado slices. Gorgeousness! Recipe will be up Friday morning. Super excited to share my variation!

Crunchy, chewy, with the incredible flavour of one of my favourite grains…amaranth!

Then came lunch. A total experiment that I was positively delighted with!

Raw “meatballs”… a combination of portobello mushrooms, sunflower seeds and chia seeds…

Soft, yet solid enough to hold together and quite easily withstand being dug in to with a fork. I was super excited for that first bite…incredibly flavour and lots of crunch! Recipe will be up tomorrow! I served mine up with some basil cashew cream, zucchini noodles and dehydrated tomatoes (or in my case super slow low roasted!) Recipe will be up tomorrow evening.

So remember the raw taco salad? I decided to make another raw taco filling alternative, this time using nuts and my oh my was I impressed.

Laid in to some perfectly formed savoy cabbage leaves, salsa, peppers, the rest of the avocado from my mid morning breakfast, a drizzle of cashew cream…the components on their own I might not go for but rolled up in to one raw delicious wrap…the end result was absolutely incredible! It totally blew my mind! I’ll definitely be making these again and I’ll be more open to trying different varieties of raw wraps.

I ended the day on one delicious high. The last slice of my positively epic cherry chocolate “cheese” cake….

I had a fair few people change it, chefs, ordinary folk and my brother…all of whom were completely blown away by it’s deliciousness. It’s possibly the best thing that I’ve EVER made. The recipe went up yesterday!!!

A brownie like case, creamy filling, sweet cherry topping…

It simply doesn’t get any better!
