This is a review of our 9th delivery from a food subscription box called Sun Basket. I gave all three recipes four out of five stars. Calories ranged from 540 to 670 and stated preparation time ranged from twenty to forty-five minutes. Actual preparation time was around fifty-five minutes. All three recipes are gluten free and two of them are paleo. As usual, all the ingredients arrived in perfect shape.
Shanghai Chicken Wings with Ginger Chile Dipping Sauce & Bok Choy Slaw
I gave this recipe four out of five stars and Hubby gave it three stars. He's picky about wings since he eats them quite often. I rarely eat them, but was delighted by this recipe's flavor. Hubby thought the wings should have been marinated in spices prior to cooking while this one stated to just add baking powder, salt and pepper just prior to baking. The dipping sauce made with fish sauce, rice vinegar, maple syrup, ginger, garlic, lime juice, lime zest, sambal oelek and salt was delicious. The chicken was moist, skin slightly crisp and they were perfectly baked. The bok choy slaw was scrumptious. The dressing was made with rice vinegar, sesame oil, tamari, lime zest, sesame seeds, salt and pepper and it was a perfect compliment to the bok choy and carrots. I forgot to add the bok choy to the photo above, they sent two. The calorie count is only 540 and the recipe indicated thirty-five to forty-five minutes preparation time. Actual preparation time was fifty-five minutes. It was a healthy portion with no leftovers. It's gluten free and paleo.
Shrimp Pad Thai
I bought this for Hubby since he loves Pad Thai, but he was out of town, so he enjoyed the leftovers a couple days later. We gave this recipe four out of five stars, it was really tasty. I really enjoyed it even though I'm not a big fan of Pad Thai. I used all of the kimchi chile flakes, yet we would have liked a bit more spice. There was the perfect amount of shrimp. It was a generous portion coming in at 670 calories and stated preparation time is twenty to thirty minutes. This one took me fifty-five minutes to prepare. I was a bit nervous about making it since I'm inexperienced, but while time consuming it landed up being pretty easy to prepare. It's a gluten free recipe.
Seared Albacore Tuna Steaks with Green Beans & Soft Cooked Eggs
Hubby was out of town, so I prepared this for my dinner and lunch for another day. I'm not very good at cooking tuna and this one was so thick it was more difficult, so the presentation shown above isn't that great in comparison to Hubby's creations. My favorite part was the salad, dressing and the purple sweet potato. I liked the way they cooked it so much that Hubby made some sweet potatoes that way for our dogs as treats. Removed the skin, cut the sweet potato in half lengthwise then crosswise into 1/2 inch thick half moons. Tossed it with olive oil, added salt, spread an even layer on a sheet pan and roasted at 400 degrees for twenty minutes, turning halfway through. They are really tasty this way. Their instructions for cooking the eggs is perfect. The vinaigrette is made with dill, whole grain mustard, sherry vinegar and olive oil, so tasty! Preparation time indicated was thirty to forty minutes and it took me an hour, mind you I'm a slow, inexperienced cook. I'm the experienced baker in the family and Hubby is the chef.
Yet another enjoyable week of recipes from Sun Basket. They are currently my favorite meal kit subscription and I'm happy to report that they now allow you to order more weeks in advance now, four weeks total. I have chosen all of the next four weeks to have deliveries sent since the recipes look so delicious. Thanksgiving week they are offering three different sides to chose from. I picked the Williams Sonoma one which is Italian Sausage and Apple Stuffing. Yum! You have until the 17th at 3 pm ET to sign up for the Thanksgiving sides. The other Thanksgiving sides are Kale & Leek Gratin with Gruyère and Brussels Sprouts with Squash, Currants & Hazelnuts. Each side recipe feeds eight to ten people! The other two recipes I ordered for that week are Middle Eastern Lamb-beef Patties with Pear Chutney & Cauliflower Rice and Thai Turkey & Cabbage Salad with Basil & Mint. They are also offering Pumpkin Pancakes and a Cranberry Orange Smoothie that I'm tempted by. So many recipes I wanted to order, but those are the three I narrowed it down to. That week they are offering the option of adding the three Thanksgiving sides in addition to the normal three recipes. Lately they have had so many scrumptious looking recipes it's been difficult to decide on just three, so it's nice they are offering the option of adding more for Thanksgiving week.
