New Cocktail Program at RingSide Fish House Creates a Splash in Portland’s Craft Cocktail Scene

FOR IMMEDIATE RELEASE ­– RingSide Fish House launches a revamped cocktail program this October that includes 16 new cocktails, an impressive ice program, and fresh juices, syrups and bitters created by Portland cocktail experts, Daniel Shoemaker and Sean Hoard of the Commissary. Letting nature write the menu, RingSide Fish House’s extensive and wide-ranging seafood menu prepared by Chef David Ezelle features Pacific Northwest favorites like oysters, Dungeness crab and King Salmon, and now the Fish House has a seasonally-driven cocktail program to match.

The Fish House’s partners reached out to Shoemaker to reinvigorate the bar program thanks to his long history of creating cocktails with a specific emphasis on seasonality and local ingredients. Shoemaker, owner and operator of Portland’s Teardrop Lounge, founded the Commissary based on the basic principles of cocktail construction, including an examination of all components used to build an exquisite drink, and to further the standards of excellence. Hoard joined Teardrop Lounge in 2010, returning home to Portland after working at the famed PDT (Please Don’t Tell) in New York City, and his unique skills and passion for craft cocktails were immediately apparent.

The Fish House’s new cocktail menu includes drinks that are as vibrant and seasonal as the cuisine, featuring classic cocktails and original concoctions to suit any taste, from light to dark and sweet to bitter. Below is a complete list of RingSide Fish House’s new cocktails, in order of lighter sips to darker drinks.

Army Navy – Gin, Orgeat, lemon and bitters

French 75 – Cognac, lemon, sugar and sparkling wine

Nor’wester – Vodka, brandy, lemon juice, honey and a Thai chili tincture

Swimming Upstream – Reposado tequila, grapefruit-cinnamon cordial, Aperol and lemon

Marabou Jig – Gin, orange, black pepper caraway shrub, bitters and soda

Rapala Loop – Pisco, pineapple gomme, grapefruit, pimento dram and egg whites

Falcon Cove – Old Tom Gin, Swedish punsch, dry vermouth and cherry-spruce bitters

Preakness – Rye, sweet vermouth, Benedictine, Angostura and Peychaud’s bitters

Apple-Ginger Sangaree – Apple brandy, rum, ginger, dubonnet rouge

Pan-American Clipper – Applejack, lime, grenadine and absinthe

Briar Patch – Rye, amaro, lemon and crème de mûre

Sweet & Surprises – Sweet vermouth, vodka and crème cacao

Scotch Improved – Scotch, maraschino, maple, absinthe and old-fashioned bitters

Stone Fence – Bourbon, apple cider, bitters

The Sporting Life – Bourbon, cranberry-sage ambrosia, and black walnut bitters

Wassail Bowl – Rum, Madeira, apple, spice, Demerara sugar, hot water and egg white
