As you may know, in 2009, I traveled to Gascony in Southwest France to study French butchery and charcuterie with the amazing Chapolard brothers and talented cooking teacher and writer, Kate Hill.  in so many ways, these are the people truly responsible for the Portland Meat Collective. They taught me an approach to meat production, education, and consumption that I have tried to recreate here in Portland through the Portland Meat Collective.  The Chapolards and Kate are amazing teachers and incredibly talented charcuteriers, cooks, and butchers, not to mention great storytellers. Dominique has traveled around the world teaching people about French butchery and charcuterie (in many ways he is the Dario of France). We are lucky that, this month, for the first time in three years, Kate and Dominique are coming to Portland to put on three events: a French Pig Butchery Master Class, a French Kitchen Charcuterie Class, as well as a Pig Butchery Demo & Cassoulet Dinner at Elder Hall.  The first two classes sold out within hours, so we decided to add the third event!  There are still spots left in the Demo/Dinner! The Art of Gascon Butchery Demo & Dinner

The talented Gascon butcher, Dominique Chapolard and renowned French cooking teacher, Kate Hill have teamed up with Camas Davis and the Portland Meat Collective, and Jason French of Elder Hall and Ned Ludd for an evening of French butchery, charcuterie, and cassoulet.  Sip wine and sample French charcuterie while Dominique gracefully works his way through a side of pork and Kate regails us with delicious tales of the Gascon countryside. After the demonstration, sit down to a  four-course cassoulet feast prepared by Kate and Jason.  French wine pairings included.  30 lucky people will get to enjoy this feast within the beautiful walls of Elder Hall.  Sign up now!
