Bring a little extra love to Valentine’s Day dinner! Roast up your potatoes and sweet potatoes in lovely little heart shapes, and serve with my favorite garlicky dipping sauce (that I put on everything – especially good with roasted veggies or salmon cakes). These were so fun to make, and even more fun to eat. Get the recipe for Roasted Potato Hearts with Garlic Dipping Sauce:

Roasted Potato Hearts with Garlic Dipping Sauce

For the heart potatoes:

Ingredients:

Sweet potatoes, about 3

Potatoes, about 3 (or whatever amount you want to eat)

Olive oil, 1/4 cup

Salt, 1 tsp

Pepper, 1/2 tsp

Chopped fresh parsley, 2 tbls

Directions:

Preheat oven to 400

Wash and slice potatoes

Cut into heart shapes with cookie cutter

Coat with olive oil

Sprinkle with salt and pepper

Roast for 1 hour, until browned

Sprinkle with Parsley

For the garlic dipping sauce:

Ingredients:

Mayo, 2 tbls

Sour cream, 2 tbls

Lemon juice, 1 tbls

Garlic, two cloves pressed or diced

Minced chives, 1 tbls

Directions:

Add all ingredients into a bowl, stir to combine
