Bring a little extra love to Valentine’s Day dinner! Roast up your potatoes and sweet potatoes in lovely little heart shapes, and serve with my favorite garlicky dipping sauce (that I put on everything – especially good with roasted veggies or salmon cakes). Roasted Potato Hearts with Garlic Dipping Sauce
For the heart potatoes:
Ingredients:
Sweet potatoes, about 3
Potatoes, about 3 (or whatever amount you want to eat)
Olive oil, 1/4 cup
Salt, 1 tsp
Pepper, 1/2 tsp
Chopped fresh parsley, 2 tbls
Directions:
Preheat oven to 400
Wash and slice potatoes
Cut into heart shapes with cookie cutter
Coat with olive oil
Sprinkle with salt and pepper
Roast for 1 hour, until browned
Sprinkle with Parsley
For the garlic dipping sauce:
Ingredients:
Mayo, 2 tbls
Sour cream, 2 tbls
Lemon juice, 1 tbls
Garlic, two cloves pressed or diced
Minced chives, 1 tbls
Directions:
Add all ingredients into a bowl, stir to combine
