Cashews are one of the most versatile nuts I know of, which the ability to get creamy and delicious when soaked and blended, or crispy and savory when roasted with spices. Because they’re a soft nut, they have a silky texture and absorb flavors well. Check out these paleo recipes using the amazing cashew!



1. Cashew Coconut Chocolate Chip Cookies

These cookies are the perfect combination of crispy and chewy with an awesome nutty flavor and plenty of melty, gooey dark chocolate. They’re sure to become your new favorite cookie! You’ll make these with a main ingredient of cashew butter, which is why they’re so rich and delicious.

2. Cashew Beef Thai Stir Fry

I absolutely love throwing cashews into stir fries and other savory dishes. They get a little bit soft and they absorb the flavor of the seasonings with a lovely creaminess all their own. This stir fry is also packed with garlic, ginger, carrot, red onion, zucchini, and beef with creamy coconut milk and spicy red pepper flakes.

3. Homemade Creamy Cacao Nib Cashew Almond Butter

Cashews in nut butter turn an always-delicious spread into a creamy, cookie-dough like confection you’ll find yourself quickly addicted to. This one is absolutely heavenly, with coconut sugar, sea salt, vanilla extract, coconut oil, and crunchy cacao nibs.

4. Sesame Curry Cashews

Because cashews are really good at absorbing the flavors of whatever seasonings you put on them, they’re excellent for roasting with flavors like this sesame curry combination. These nuts are super addictive, and you’ll just need cashews, curry powder, cumin seeds, sesame seeds, salt, and coconut oil!

5. Chicken and Cashews

This delicious chicken bowl will give you a boost of protein along with delicious flavors from garlic, coconut aminos (to replace the tamari), cashews, carrots, celery, and broccoli. Adding a bit of tapioca flour helps to thicken the sauce without any grains or dairy.

6. Dairy Free Coffee Creamer

For those indulgent moments when you allow yourself a sweetened, steamy beverage (I don’t know about you, but I can only handle black coffee for so many days in a row), try this dairy-free creamer made with cashew cream and sweetened with dates, vanilla, and cinnamon.

7. Cranberry Vanilla Energy Bites

These energy bites are perfect for a pre-workout fuel snack or a post-workout recovery treat with raw cashews and almonds, dried cranberries, medjool dates, vanilla extract, and a pinch of salt. The natural sugars will boost your body for a powerful workout!

8. Easy Vegan Cashew Cheese

This dairy-free cheese is fully paleo and vegan and made almost completely from cashews. It makes a great dip or spread! Replace the soy milk with a non-dairy milk of your choice and allow the nutritional yeast and Dijon mustard to create a fantastic flavor you’ll want to put on everything.

What a brilliant idea! This dairy-free sour “cream” is perfect for dipping veggie slices or veggie chips, or for adding to the top of some delicious paleo tacos or enchiladas. All you’ll need is cashews, lemon, green onion, apple cider vinegar, and Himalayan salt.

11. Paleo Pumpkin Spice Donuts With Maple Frosting

These donuts are baked, not fried, so not only are they easier to make, but they’re a bit healthier for you, too! The base is made from pumpkin puree, almond flour, tapioca flour, and creamy coconut milk with a maple frosting made from soaked cashews with lemon and vanilla.

12. Paleo Ricotta Cheese

Like sour cream, ricotta cheese can be mimicked in flavor and texture using cashews! This cheese is made from cashews, coconut milk, salt, and nutritional yeast, and it would make a great filling for paleo lasagna or other dishes you’ve been missing out on.

13. Almond Flour Cinnamon Rolls

These cinnamon rolls have exactly the deliciously gooey texture you’re looking for in a nice, chewy cinnamon roll. The doug is made with almond flour, maple, and vanilla, and afterwards, you’ll top those babies with a cashew frosting sweetened with maple syrup or honey.

14. Coconut Curry Cauliflower Stew With Potatoes and Cashews

For a stew to warm you right up on a chilly evening, try this one with cauliflower, red potatoes, cashews, saffron, garlic, jalapenos, coconut milk, and more. It’s hearty enough that you won’t feel like you need naan bread, but if you do, check out our naan list!

15. Kale Salad With Spiced Maple Cashews and More

This salad is spicy and sweet with maple cashews, dates, and a pomegranate molasses dressing over hearty kale. The garam masala spice adds a warming flavor to this winter salad, and the pomegranate molasses dressing is just the right about of sweet.

16. Sweet and Spicy Roasted Cashews

Speaking of sweet and spicy, these addictive cashews have both of those flavors with honey, ground chili powder, coconut sugar, and salt. You can use regular chili powder for a milder effect, or you could use something super hot and spicy like cayenne or chipotle.

17. Maple Cashew Coconut Fudge Squares

Traditional fudge can be really tricky with candy thermometers and extended stovetop times. This fudge, though, is insanely easy to throw together with coconut butter, coconut oil, maple syrup, shredded coconut, cashew butter, vanilla, sea salt, and raw cashews.

18. Crockpot Pumpkin Pie Spiced Nuts

Did you know you can use your slow cooker to make more than just soups, stews, and chilis? You can even use it to “roast” nuts like with these fabulous pumpkin spice cashews along with almonds, pecans, and pumpkin seeds spiced with maple, cinnamon, and more.

19. Pumpkin Blueberry Cashew Chocolate Muffins

These muffins are full of good stuff like fruit, chocolate, and nuts. Mashed banana acts as the main sweetener, while vanilla, cinnamon, blueberries, and chocolate chips take over the flavor train and creamy cashew butter is the base that keeps the muffins rich and moist.

20. Lemon Coconut Slice

This easy no-bake slice has a base made from cashews, coconut, pitted dates, and lemon, with a cashew icing that has a delicious among of vanilla bean powder. The recipe calls for rice malt syrup, but you can use maple syrup (my favorite) or honey instead.

21. Roasted Cashew Butter Cookies

If you were a big peanut butter cookie fan before your paleo days, this is the recipe you’re going to want to pay attention to. These cookies are made with roasted cashews and cashew butter in a base of almond and coconut flours with tapioca starch, raw honey, and ghee.

22. Sweet Potato Noodles With Cashew Cream Sauce

These yummy sweet potato noodles are a great pasta substitute, and they couldn’t be more flavorful covered in a creamy cashew sauce blended with sriracha and cilantro and mixed with cherry tomatoes. Replace the soy sauce with coconut aminos and you’re all set.

23. Spiced Apple Porridge

I have a thing for grain-free porridges, because you have to be a bit innovative to come up with them, but they’re oh-so-rewarding to make and enjoy. This one uses cashews, almonds, and walnuts combined with coconut milk and unsweetened applesauce.

24. Pumpkin and Pistachio Cashew Cheese Truffles

Now this is a snack you’ll want to keep in mind for your next gathering, and oh man, is everyone going to love these! This is a recipe for savory truffles made from cashews, roasted garlic, salt flakes, pumpkin puree, and crushed pistachios. The roasted garlic MAKES this recipe. Yum!

25. Sweet Potato Chips With Creamy Lemon and Dill Dip

These awesome chips with flaked sea salt are so addictive, but you don’t have to feel guilty about eating the whole tray, because they’re healthy, too! For the creamy lemon and dill dip, you’ll use creamed cashews with lemon juice, fresh dill, salt, and black pepper.

26. Sweet Potato Cashew Alfredo

In this recipe, a veggie-rich “pasta” dish is covered in a cheesy (without any dairy!) sauce made from creamed cashews, chicken or veggie broth (bone broth would be perfect), garlic, salt, and pepper. You won’t believe how fast this faux Alfredo sauce comes together, and how tasty it is!

27. Paleo Cookie Dough Fudge

This cookie dough fudge recipe really does taste like you’re eating raw cookie dough, but it’s actually a decent source of protein and nutrients (while still a treat). You’ll need butter or ghee, raw cashew pieces, coconut oil and flour, raw honey, vanilla, ground cinnamon, and chocolate chips.

28. Green Smoothie Bowl With Cashew Butter Magic Shell

This magic “shell” gardens upon contact with something cold, thanks to the coconut oil. You can use it on this fabulous hemp-and-avocado smoothie bowl, or use it to top homemade coconut milk ice cream. Either way, it’s super creamy with cashew butter and doesn’t need sweetening.

This cocoa recipe is made with homemade cashew milk, which is super easy to make at home, and doesn’t require straining. You’ll sweeten it with a touch of honey and flavor it with cacao powder. You could also add a dash of cinnamon for a Mexican hot cocoa!

31. Double Chocolcate Cashew Milk Popsicles

I live in a very hot climate, and popsicles are my saving grace for 9 months of the year when it’s super hot. One of my favorites is these simple chocolate cashew pops, which you can make with homemade chocolate cashew milk instead of store-bought, if you want.

32. Heirloom Tomato Pie With Almond Flour Crust

This fully-paleo pie is made with a delicious and beautifully rustic almond flour crust, a blistered heirloom tomato topping, and a creamy cashew herb filling made from creamed cashews, garlic, fresh basil and parsley, lemon juice, and salt.

33. Raw Vegan Blueberry Vanilla Ice Cream

You can make this recipe without an ice cream maker, which is a total bonus for a recipe that’s so tasty, I would run out and buy an ice cream maker just to make it if I needed one. You’ll need cashews, avocados, coconut milk, coconut nectar, vanilla, and blueberries.

With a delicate rose and cardamom flavor and a creamy cashew-vanilla filling, these energy balls are sure to become your new favorite snack recipe. Hey, with such a lovely and unusual flavor, you could even give them as gifts during the holidays or for other occasions.

Because cashews turn smooth and creamy when you soak and blend them, they’re an outrageously popular filling for dairy-free cheesecakes. This one is elegant and sweet with raw pecans for the cinnamon crust and a maple-sweetened filling with coconut milk and lemon.

This easy pudding is made with a base of raw cashews, so the flavor of the cocoa doesn’t have to compete with coconut milk, a more typically chia pudding base. How cool! Because this pudding is sweetened with a blend of honey and maple syrup, neither of those flavors take over, either.

This shake is perfect on a warm afternoon when you’re starting to feel the 3pm slump and you need something to get you moving. Try frozen coffee cubes with raw cashews, frozen bananas, raw cacao, medjool dates, coconut cream, and vanilla.

38. Triple Chocolate Raw Cheesecake With Caramel Crust

This cake is sweet and chocolaty from top to bottom with a date and walnut crust including coconut sugar and cacao powder, a filling made from creamed cashews with raw chocolate, almond flour, and agave (you could use maple instead), and a topping of raw melted chocolate.

39. Potato, Leek, and Cashew Soup

Sometimes what you really need is a simple and lovely soup to warm your bones. This one is just that, with creamed cashews, while potatoes, leek, chicken bone broth (good for the body!), thyme, rosemary, salt, and pepper. Serve with basil flowers and olive oil.

I love strawberry and vanilla together, so these cupcakes are right up my alley. You can make them, too, with ground almonds, eggs, coconut sugar and coconut oil, vanilla powder, and fresh strawberries. Top them with a rich cashew frosting sweetened with coconut nectar.

These pinwheel cookies are beautiful in both appearance and flavor, and they’re easy to make. Chia seeds leave them packed with protein and nutrients, and the cashew flour gives them a rich and delicious texture with lots of protein.

Most protein bar recipes are full of sweet flavors like fruits and chocolate, and they tend to have more sugar in them than some of us want. This recipe, though, is savory with raw cashews, coconut and almond flours, and chopped herbs like rosemary, garlic, and onion.

Mint chocolate chip is one of my favorite ice cream flavors, but it can be tricky to make paleo-style because most replaces use coconut milk, which has a strong coconut flavor competing with the mint. 48. Thai Slaw With Coconut Mango Dressing

This slaw is hearty enough to make a full lunch, and it’s so tasty you’ll think you’ve died and gone straight to Thailand. Make it with green cabbage, bell pepper, mango, toasted cashews, and a delicious coconut mango dressing made from coconut milk and chili paste.

49. Superfood Cashew Butter

With the added nutrients of chia seeds and melted coconut oil, this sugar-free nut butter is a bit more nourishing than what you’d buy from the store. Pure sea salt adds necessary minerals and nutrients, and stevia powder adds a bit of no-carb sweetness.

Made almost completely of cashew butter, these rich and delicious brownies really do taste like a cross between a brownie and a birthday cake. They’re more like blondies, really, with coconut sugar to sweet, and chocolate chips and rainbow sprinkles throughout.
