After the success of the Cider Salon at Jimmy’s No. 43 during Cider Week NYC, we’re adding more programming for Saturdays in 2016. This month in honor of the 8th Annual Cassoulet Cookoff, we’ll be launching Cassoulet Weekend with a Cassoulet Salon featuring special guest Kitchen at Camont owner and French culinary and charcuterie instructor Kate Hill all the way from France!

We’ll have different panels at the top of the hour with time to mix and mingle and sample some cassoulet (drinks and additional food available for purchase). $10 in advance or $15 at the door. Panels to include (subject to change):

From Languedoc to the Hudson Valley: Local Agriculture and the Building Blocks of Cassoulet

Panelists: Sara Grady, June Russell and Rachael Mamane

This panel/discussion will talk about the relevance of regional agriculture and the building blocks of a great cassoulet. Sara will talk about the revival of heirloom beans in the Hudson Valley (hopefully to include the connection to seed saving and regionally adapted heirlooms); June can speak on the revival of beans/grains regionally (June); and Rachael will talk about developing a regional cuisine.

The Art & Craft of Cassoulet: Busting Myths and the Art of the Perfect Cassoulet

Panelists: Kate Hill, Cathy Erway and TBA

This panel/discussion will be more cooking-focused, with all three panelists contributing to a general conversation regarding the history of cassoulet, its tradition in France, cassoulet in modern gastronomy, cassoulet recipes and the art of the perfect cassoulet.
