MERRY CHRISTMAS everyone! I pray your holiday season has been a blessing to you and those around you. I pray we are all sharing the LIGHT of the JOY and HOPE this season brings.

It seems that every season, in the midst of joy and the hustle and bustle of all the fun, we circle around food the most. This recipe has been with me for about 8 or 9 years after my sister baked it. It quickly became one of my two “go-to” recipes. My husband and I have been roasting our own green coffee beans from around the world for about 8 years . . . we are coffee fanatics . . . so coffee cake just makes sense!

For about four years we have been eating a very low gluten diet. We aren’t 100% but when I decided this was the recipe I wanted to share, I wanted to see if I could create a good GF option for our family since this is one of my family’s favorites. I have to say . . out of all my GF baking experiments . . . this was my favorite!

I wouldn’t say that I’m a very intuitive baker, so don’t be intimidated in the least by this recipe—it’s EASY and super delish!

Here you go:

Sour Cream Coffee Cake

Coffe Cake Ingredients:

1 cup sour cream

1 cup white sugar

1 cup margarine

1 TBSP brown sugar

2 eggs

2 cups GLUTEN-FREE flour or your regular flour

1 tsp vanilla

1 tsp soda

1/2 tsp salt

Topping:

1/3 cup brown sugar

1/4 cup white sugar

1 TBSP cinnamon

1 cup nuts (optional)

*Cream butter, white sugar, & vanilla. Add eggs and beat. Sift flour, soda, brown sugar, & salt together and add to creamed ingredients alternately with sour cream. Alternate half the dough and topping in well-oiled/floured pan. Half the topping should be in the middle of your dough.

Bake at 350 for 30-35 minutes.

As a reminder . . . the batter is fairly firm, stiffer than a typical cake recipe . . . don’t be alarmed, this is normal. The gluten-free version of this might have been better than the original one. I loved it and all of my visiting family that traveled for Thanksgiving went crazy over it.

The gluten-free flour I used was Namaste Foods Gluten Free Perfect Flour Blend. I found it at Costco.

I can already taste it again on Christmas morning with some hot, dark Kenya AA coffee. Can you taste it?
