It was fun doing this Hello Kitty Cake. I remember when I was young, it was one my favorite Sanrio characters aside from the Little Twin Stars. The cake topper was made from RKT or Rice Krispies Treats. The RKT though had to be made without any pork product. I almost declined because I always use RKT and it has marshmallows which mean it has gelatin on it that has pork product listed on the ingredients. Well, the good thing is you can make RKTs without pork product by using kosher marshmallow or by using marshmallow crème. Yes, marshmallow crème does not have gelatin. The gelatin is what makes marshmallow have form, marshmallow cream instead are spreadable.
Hello Kitty’s dress here matches the color the birthday celebrant wore that day. Cake topper is all RKT covered in fondant. The bottom tier is made of double chocolate chips cake while the top tier is a vanilla cake. The double chocolate chips cake was filled with caramel Swiss meringue buttercream while vanilla cake was filled with vanilla Swiss meringue buttercream. Both were then covered with chocolate ganache to get that straight edge finish under fondant. The ruffles took most of my time doing this cake, I thought it took forever…but I was happy with the results! Sending you all sweet hugs!
