That can be a good thing and bad thing. I whip out my projects usually pretty quick but leave the disaster of a tornado behind me.

Garden Fresh Zucchini Fritters @Pure Grace Farms — I made this using a zucchini and yellow squash. Surprisingly, my youngest son who doesn’t care for fresh tomatoes actually liked this. The only change I would make for my family is to cut down on the cumin.
