Welcome to the second annual brunch week hosted by Terri of Love and Confections and Susan of The Girl In The Little Red Kitchen!  Join us May 5th through 11th while we celebrate the deliciousness of brunch and to prepare for Mother’s Day and summer brunching season.  We have 32 bloggers bringing you their best brunch game, from cocktails to eggs benedict to donuts, there is something for everything this week.  Our amazing sponsors have donated some great prizes for a gigantic giveaway, please visit them all for more information. What better way to start brunch week than with a cocktail, one that is traditionally enjoyed during brunch. So instead of the usual orange juice why not mix it up with some mango?

Mango Mimosa

Ingredients:

2 mangoes peeled and diced or canned pureed mangoes

1 bottle (750 ml) chilled Champagne, Prosecco or Sparkling Wine

Directions:

If using fresh mango, in a food processor or blender puree mango. When completely blended push the pulp through a fine mesh sieve discarding any solids. You could also use the canned mango if fresh is not available. You should have about 1 1/2 cups of puree. In a pitcher combine the puree and champagne. Pour Mimosa into champagne glasses and enjoy.

*For a non-alcoholic version replace the Champagne with Sparking Cider.
