300ml solitary cream

Combine the coconut cream, cream and milk in a small saucepan. Split vanilla pod in half lengthways; scrape seeds in to the pan then place pod in pan. Bring the cream blend to a boil; strain into a large jug (heatproof), discard the vanilla pod.

Whisk the egg yolks and glucose until just combined; gradually whisk in the popular cream mixture. Strain into a large jug.

Return mix to same pan; stir over a minimal temperature, without boiling, until it really is thickened slightly; mix within the coconut. Pour right into a baking tin, cover and freeze until almost set.

Chop the ice-cream roughly, beat in a big bowl with electric mixer until even. Pour into loaf tin, cover and then freeze until firm.

This is a lovely recipe for coconut ice cream. My first attempt was a success! The only transformation I designed to the substances was to use a teaspoon of vanilla remove as opposed to the vanilla pod.

The thing I would do differently next time is not use a small saucepan to boil the milk and cream combination. As soon as it started to boil it erupted on the sides of the skillet making chaos! Large saucepan skillet would be much better.

For a bit of extra yumminess, next time, I shall cut the snow cream into rectangles, stay in a ice cream stay and drop them in delicious chocolate. Homemade Bounty' snow creams!! YUM!
