Rich Guinness Brownies
A while ago, I posted a recipe for Guinness Chocolate Cupcakes. They are amazing, but I wanted something that was easy to make on rushed days. Would substituting Guinness for water in a boxed brownie mix make delicious Guinness Brownies? Enter a box of Ghirardelli Chocolate Supreme brownie mix and Guinness Black Lager. I have rarely met a brownie that I couldn’t pass up, and Ghirardelli is no different. The rich mix of premium chocolate elevates these brownies to amazing. And as I found out, the Guinness Black Lager made Guinness Brownies a step above amazing. I could barely get the brownies cooled enough for a picture when my family was vying for who got the edge pieces!
Guinness Brownies in Less than an Hour
It takes just minutes to mix up a batch of Guinness Brownies. I think it actually took longer for my oven to heat up than it did for me to get them in the pan, ready to bake. Making Guinness Brownies is as easy as a simple substitution or two. The box calls for an egg, ⅓ cup of oil, and ¼ cup of water. I substituted light olive oil for the vegetable oil. It doesn’t change the flavor, but adds a healthier aspect to the finished brownies. I use light olive oil in all my baked goods and my family doesn’t even notice. The other, more noticeable change was substituting Guinness for the water. It added a deep, earthy flavor that really made the chocolate pop. Experience has taught me to keep the beer at room temperature for the Guinness Brownies, and pour it into a small plastic bowl with a lid. Seal it tight and shake it for a few seconds to drive out the carbonation. When you pour it into the mix, stir it all well, as the directions on the box call for. You’ll have the best Guinness Brownies you’ve ever tasted.

Guinness Brownies
Ingredients
1 box Ghirardelli Chocolate Supreme brownie mix
1 egg
⅓ C oil
¼ C Guinness Black Lager, room temperature and carbonation removed
Instructions
Heat oven to 325 degrees F.
In a bowl, mix the egg, oil, and lager.
Add the brownie mix and chocolate syrup pouch. Mix well.
Spray an 8x8 pan with nonstick cooking spray.
Spread the brownie batter in the pan.
Bake 45-50 minutes, until a toothpick inserted in the center comes out clean. The brownies will seem a little undercooked, but they will continue cooking in the pan as they cool.
Allow to cool.
Cut into squares and serve.

Different Flavors for Guinness Brownies
You can add different flavors to your Guinness Brownies by using different flavors of Guinness, or even trying other types of beer. I personally prefer the dark flavor of the Black Lager, but a friend of mine used a blueberry beer in her brownies for a slightly sweeter, fresher flavor. However you make them, Guinness Brownies will replace plain old brownies on your dessert table.
