Chicken Carnitas a la the Slow Cooker

I love making just about everything in the slow cooker.  Busy days keep me from spending more time in the kitchen, and Chicken Carnitas came from that busy schedule.  Fresh chicken simmers all day in a wonderful prepackaged sauce, making the dish simple and delicious, with very little effort.  I found Frontera sauces in the Mexican food section of my favorite grocery store, and I think I’ve tried all of their flavors now.  Every one of them is delicious and fresh, giving your Mexican and Tex-Mex style foods wonderful flavor with the ease of opening a pouch.

Making Chicken Carnitas

The slow cooker is the best help in Chicken Carnitas.  All you need to do is place the chicken pieces in the crock, pour the sauce over, cover, and set to low.  Six to eight hours later, you have perfect chicken that shreds in minutes, with it’s tender juiciness.  But what goes with Chicken Carnitas?  I layer my Chicken Carnitas, starting with a small flour tortilla that I steam.  Then the chicken, dipped in the sauce it cooked in for extra flavor, gets placed on the tortilla.  I saute onions like I’m making fajitas, on a dry skillet, then put them over the chicken.  This provides a wonderful flavor that you can’t beat.  Shredded cheese, sour cream, and slices of avocado top the whole wonderful dish, and you’ve got the perfect Chicken Carnitas.

Ingredients

4 chicken breasts, preferably boneless and skinless

1 packet Frontera Garlicky Carnitas Slow Cooker Sauce with Lime and Chipotle

10 small flour tortillas

1 large sweet onion, peeled, halved, and sliced

8 oz shredded Mexican cheese blend

sour cream

1 avocado, sliced thin


Instructions

Place the chicken and Frontera sauce in the slow cooker. Cover and set to low. Allow to cook for 6-8 hours, until chicken is tender and no pink remains.

Remove the chicken and shred using two forks. Place back in the slow cooker.

Heat a skillet over medium high heat. Add the onions and saute until the onions start to turn clear. Place in a bowl.

Steam the tortillas by placing them between two damp paper towels and placing in the microwave, on high, for 30 seconds.

Place a tortilla on a plate. Top with chicken, onions, cheese, sour cream, and avocado.

Serve hot.

Changing Your Chicken Carnitas

Traditionally, carnitas are made with pork.  I prefer a leaner meat and chicken was on sale, making it an easy choice.  You can make these Chicken Carnitas with any meat you like though.  Pork and beef making wonderful carnitas, and you can even use the same seasoning packet.  Changing up your toppings can really change the flavor of your carnitas as well.  Add your favorite hot sauce, saute up peppers with the onions, or make guacamole from the avocados.  There are a thousand ways you can change up your Chicken Carnitas and make them your own!
