Is there seriously anything more magical than waking up on Christmas morning? New pajamas, cozy socks, a cup of coffee in hand - ready to rip open those gifts! And the smell of these Christmas Morning Pancakes with whole grain oats, buttermilk, white chocolate and cranberries on the skillet - that is the perfect start to Christmas!

I am SO incredibly excited for Silas and Wesley to wake up this year on Christmas morning. At 3 and 5 years old, they are in full on Santa radar mode! Up until last year, we kind of just chose all of their gifts ourselves, especially Wesley's, because they really weren't able to give us a list. Silas did have a small Christmas list last year, but it really wasn't that specific. This year?? Totally different!



Wesley is asking for all Thomas train tracks and trains. And Silas... well he definitely has a list this year, haha! Wii games, a tablet with Minecraft, a Nerf bow and arrow. I seriously think he's going to freak when he opens that tablet under the tree!

It's so funny as an adult the "magic" of Christmas morning shifts from receiving gifts to giving gifts. I'm so glad God has blessed us with that shift in perspective. I'll tell you though, it's one of the hardest things to teach a young child. When we were putting together our Operation Christmas Child shoeboxes (they are special gifts that get sent to children in other countries) they boys first wanted to keep all of the toys and toiletries we were packing. And then when we explained what they were really for, they wanted to add all of those things to their Christmas list! Umm... you already have pencils, notebooks, toothbrushes, and soap kids! Sigh. I'm sure I was like that as a kid at Christmas time and I'm sure the more we focus on giving they will get the idea.



These pancakes are such a fun way to bless your family this Christmas morning! I simply love the red from the cranberries and the melty white chocolate chips. And of course the quick oats will fill them up, too!

Christmas Morning Pancakes

makes 9 pancakes

1/2 cup flour

1/2 cup Quaker Quick Oats

1 tablespoon sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

3/4 cup buttermilk

2 tablespoons oil

1/2 teaspoon vanilla extract

1/2 teaspoon almond extract

1 egg, beaten

1/2 cup white chocolate chips

1/2 cup dried cranberries

In a mixing bowl, combine flour, oats, sugar, baking powder, baking soda, and salt. Mix in buttermilk, oil, extracts, and beaten egg. Allow mixture to sit for 5 minutes to thicken slightly. Gently stir in chips and dried cranberries. Drop 1/3 cup of batter on a greased griddle on medium heat. Flip pancakes when the edges turn dry and a few bubbles are visible on the surface. I was able to get 9 pancakes out of this batch, but you can easily double if you need more servings.
