Y’all, I have a confession. I’ve been keeping a secret from you for a few months. But now I am excited to let you in on the news! As a Produce For Kids contributor, I am part of their first printed cookbook, Healthy Family Classics Cookbook.

I contributed a recipe for Italian Vegetable Wild Rice Salad and I am finally able to share it with you. Loaded with protein, lots of fresh vegetables and whole grain wild rice, it makes a perfect salad main dish. Or paired with a soup or simple sandwich, can serve as a side dish too.



But before I share my recipe, I want to tell you more about the Healthy Family Classics Cookbook. In it you’ll find a collection of easy recipes, created by moms, food bloggers and registered dietitians, that make eating healthy a breeze. Sprinkled throughout the book are tips on involving kids in the recipe process. Italian Vegetable Wild Rice Salad + Healthy Family Classics Cookbook (and a giveaway!)

Serves: 6-8

Ingredients

Dressing

3 tablespoons lemon juice

3 tablespoons red wine vinegar

¼ cup fresh parsley

1 tablespoon oregano

½ teaspoon salt

¼ teaspoon ground black pepper

¼ cup olive oil

Salad

4 cups cooked wild rice, cooled

1 cup diced cooked ham

4 oz chopped pepperoni

½ cup chopped purple onion

½ cup chopped yellow bell pepper

½ cup chopped green bell pepper

1 cup chopped, peeled cucumber

Instructions

In a small bowl, combine lemon juice, red wine vinegar, parsley, oregano, salt, pepper and olive oil. Set aside.

In large bowl, combine rice, ham, pepperoni, onion, peppers and cucumber. Stir gently to mix. Chill for at least one hour before serving, up to 8 hours. Just before serving, mix in dressing.

Makes 8 servings.
