Here’s a round up of some of my favourite Cake recipes, which you can bake during this season. There are some obvious choices for this season like traditional fruit cake recipe, but some not so traditional recipes, like White Chocolate Mud Cake and Lemon Drizzle Cake.

I do hope you find this list interesting and useful. Btw, there is no particular oder as such. I’ve tried my very best to pick out my fav cake recipes. All I can say is making this list wasn’t a “cakewalk”. Make sure you at least try one of these recipes, done?

So, here you go with the list:

1. Traditional Kerala Christmas Fruit Cake / Plum Cake



Well, the first thing that comes to mind when you think about Christmas cake is the fruit cake, right? Honestly, I wasnt a big fan of fruit cake until a few years ago. I blame the dry fruit cakes that we get in the bakeries! I used to wince at the sight of a fruit cake during my school days. It all changed when I happened to taste a Fruit Cake from my friend’s place. I made it a point to get the recipe then and there and ever since, baking Fruit Cakes is one of my fav Christmas traditions :)

2. Eggless Alcohol Free Traditional Fruit Cake / Plum Cake

Ever since, I posted the above recipe, I get queries about alcohol free and eggless version of it. So last year, I did manage to bake one such recipe and I was really happy with the result. Btw, if you want an eggless cake, but dont mind the alcohol part, go ahead soak your fruits in rum and follow the rest of the recipe.

3. Mixed Nuts Cake

If you can have an all fruits cake for Christmas, why not go nutty and have an all nuts cake, right? If you like different nut varieties, this is a good recipe for you to try.

4. Dates Cake

I’ve seen many people baking Dates Cake during this season, instead of the traditional Fruit Cake. For me, I dont wait for any particular season to bake this cake. It’s one of my favourite cake recipes and honestly, I’m a bit sad to see that not many people have tried this recipe. That reminds me, next time I bake this, I need to click a good photo (it finishes before I can take a shot)! Whenever I bake it for some of our friends, I always get good feedback and queries about the recipe. It’s a very simple recipe and the key to this recipe is using the best quality dates.

5. Red Velvet Poke Cake

This cake is very apt for the season and trust me, it’s definitely a crowd pleaser. I’ve seen kids and adults gushing over this cake. You can also use this as a dessert for a big party and it’s ideal for a potluck party too. The vibrant red colour of the cake, along with creamy icing, topped with colourful sprinkles, is a treat for your eyes as well (yummm).

6. Orange Almond Yoghurt Loaf

Honestly, I wasn’t a big fan of orange flavoured things, except may be for the “Tang” ;) I always liked the lemon flavour. After baking this cake, I’m almost a convert. I loved the golden colour of the cake as well as the orangey scent and not to mention the nutty dense texture. It’s a good combination of fruits and nuts. Also, this recipe is from the famous Hummingbird Bakery’s Baking Book. Give this a try.

7. Eggless Pineapple Cake

If you ask me, I love this cake mainly because of how it looks… I know it’s kinda shallow thing to say. But look at that cake, it really looks pretty, right? Well, I like any pineapple flavoured cakes/desserts and this cake is no exception. Also, this is a great choice, if you are looking for eggless cake recipes.

8. Cinnamon Roll Cake

If you are a regular visitor here, you should be knowing my love for Cinnamony things. I love cinnamon rolls and when I saw this recipe, I was instantly hooked. This is such a simple recipe and sure hit.

9. Butterscotch Surprise Cake

My love affair with butterscotch/toffee flavours started during my school days. Whenever we used to go out for ice creams during my school days, I used to order butterscotch milkshake with butterscotch ice cream, ah, just remembering it makes me crave for one right now. I should say that I’ve succeeded in converting Jose to a butterscotch fan as well. Apart from the butterscotch flavour, I like the texture of this cake. Half pudding, custard and cake texture. Not to mention, it’s a good looking cake too ;)

10. Moist Carrot Cake With Cream Cheese Icing

I’m yet to figure out what makes this cake very popular. I mean in general, people are big fans of carrot cake. I guess it’s the combination of a light cake topped with a creamy icing which has a small tanginess from the cream cheese, that makes this cake so special. Again, this is one of the popular cake recipes here in MM.

11. Mocha Marble Bundt Cake

What should I say about this cake… I think this was the first fancy cake I ever had in my life. The sight of vanilla and chocolate swirls was a mystery to me as a child. I’m not sure what made this cake so appealing, whether it’s wonderful buttery texture or the flavour combinations of vanilla and chocolate or just the simple factor that it’s a gorgeous looking cake. I guess, it’s the whole package! One of the must try cake recipes, if you ask me…

12. Eggless Vanilla Cake

Do you believe in the saying “things will come to you, when you stop looking for it”? That’s what happened to me with this cake. Since I was getting lots of requests for eggless cake, I was constantly looking for a good eggless cake recipe. But I wasn’t happy with what I saw. I got frustrated and I almost gave up. Then one day, one of my friends gave me a handwritten copy of some recipes she saved years ago.  I went through those recipes and I saw this one. The funny thing was it was titled something else. So I read the recipe and I thought it’s just another vanilla cake recipe. It took me sometime to figure out that this recipe doesn’t have any eggs in it. I was very excited to try this one and was keeping my fingers crossed. It did come out very well and to this day, this is one of Jose’s fav cakes. This cupcake with butterscotch icing is his favourite.

13. White Chocolate Mud Cake

May be I should have started the list with this cake. I’ve lost count of how many times I’ve baked this cake. I still can’t understand how such a simple cake can taste so great! I believe it has to do with the ingredients. It’s one of the super easy cakes to bake and I’m sure it’s one of the best cakes you can bake, if you wanna impress somebody. I just love this texture and trust me, I really find it very difficult to stop eating this cake, it can be addictive!

14. Lemon Drizzle Cake

This is one of the first lemon cakes I’ve tried and I guess this cake is the reason why I love lemon based cakes and desserts. I baked it during my earlier baking/cooking days and I still remember that, Jose found it hard to believe that I baked this cake ;) It’s a moist butter cake flavoured with lemon zest and the syrup drizzled over the cake really enhances the texture of the cake.

15. Best Ever Coffee cake

After compiling the initial list for this round up, I felt the list lacked something. That’s when it occurred to me, I didn’t put the Streusel Cake recipe here! If you ask me to choose between an icing cake and a plain cake with a Streusel topping, I don’t have to think twice. My vote is always for Streusel. It’s like every time I go shopping, I end up with black dresses, there is no explanation why I do that, that pretty much explains my love for Streusel cake. If you haven’t tried it yet, please do, I can guarantee you that you wont regret it!!

16. Eggless Chocolate Cake

I really wanted to limit the cake recipes to 15, but the list will be incomplete without a good Chocolate cake recipe, right? So this is a bonus! Also, a good chocolate cake recipe in your repertoire is like a good little black dress ;) It works all the time. I’m sharing the eggless version here, since it can be tried by everybody.
