Coming from tropical Brazil, I didn’t know what autumn really was until I was 18. In Brazil, it is usually hot all year round, the temperature ranges from around 20C in the winter to 35C in the summer. There are basically two seasons: a hot season and a warm season.

I loved moving to England and experiencing four defined seasons that I’ve only knew from geography books. Summer is my favourite season as I love the longer days, but autumn is definitely the prettiest. It is simply gorgeous when the leaves change colour and start falling down, I find it very romantic.

Forest Holidays are putting together a list of things of autumn activities, 30 Days of Autumn, in which bloggers are sharing their favourite autumn activities, including arts & crafts, things to do with kids, dog walks and photography tips. We were asked to share our foodie autumnal experiences, and came up with our favourite autumnal food recipes to make the most of cosy nights in.

We usually have slow cooked dishes, such as stews and casseroles in the autumn and winter. They are great to be made in advance, you can add any vegetables and meat you have in your fridge, and adjust the spices and herbs according to your test.

Our favourite autumnal recipes are:

Moroccan Turkey Stew Recipe with Bulgur Wheat:

The aromatic Moroccan-style stew has a sweet flavour from apricots and sweet potato, while the spices and herbs added a rich flavour to the dish.

Beef & Ale Casserole Recipe with Mustard Mash:

The rich and tasty beef and ale stew complements the flavoursome mustard mash, making it a lovely autumn dish.

Pumpkin and Apple Soup:

Soups with crusty bread are perfect on a cold evening. The seasonal ingredients pumpkin and apple work very well together with the paprika.
