This is the perfect backyard BBQ appetizer.  You need to have a BBQ party just so you have an excuse to share these with your friends.

Small plates.  The perfect handful.  You had better count for at least 3 per person.  They are that yummy.

Easy to handle, hearty and quick to put together.  And they taste over the top delicious.  These are a great way to get the party going especially paired with a tequila cocktail.  I love to make these when I have leftover steak or roast in the fridge but they are good enough to give you an excuse to make  a great steak from scratch.

Check out my recipe and plan to make them for your next get together.  The blue corn tortilla make them gluten free and if you really want to, you can make them vegan by substituting portobello mushrooms and a little avocado for the steak pieces.  Equal amounts of drool……

Vietnamese Inspired Steak Taco Appetizers

11/2 package blur corn mini tortillas

leftover steak, or roast, thinly sliced

sour cream (I love to use Western Creamery low fat which is made with skim milk and NO additives)

roasted onion, sliced and diced

1 tsp rice vinegar

1 tsp soy sauce

pinch of sugar

pickled carrots

cilantro

salt and pepper to taste

hot sauce if you like

1. Gently heat, steam or BBQ tortillas.

2. Spread a dollop of sour cream over tortilla.

3. Sprinkle with meat or vegan options.

4. Combine soy sauce, vinegar and sugar.  Lightly sprinkle over meat.  Not too much, or you will make your tortilla soggy.

5.  Season with salt and pepper.

6.  Top with a little more sour cream.

7.  Add a little of the carrot pickle. (see a quick and excellent recipe for a carrot pickle here)

8. Add some cilantro.

9. Season.

10. Serve immediately.
