This is the perfect summer appetizer to WOW your guests.  No joke, this will get a wow.

It’s super fast, super easy, super light and it tastes awesome.

Bonus points?  It’s affordable, lean, usually wild and high in protein.  You can get octopus at your local fish market or at some of your larger local grocers.  I love to get mine at Longo’s; they always clean it very very well.  This is my go to recipe, simple and quick, just take care not to over cook as that’s when your octopus can turn from luscious to rubbery in a snap.



serves 2

1 small to medium sized piece of wild octopus, usually 1/3 lb

1 tbsp olive oil

1/2 tsp each salt and pepper

1/2 tsp sweet smoke paprika

1/2 tsp garlic powder

1/2 tsp dried basil

for sauce:

2 tbsps olive oil

handful parsley

1 clove garlic

3 anchovies

juice of half a lemon

salt and pepper to taste

grated lemon zest to top

Directions:

1. Season octopus with all listed ingredients.

2. Marinate for a minimum of 20 minutes up to an hour.  In a pinch, you can skip this step.

3. Grill on a hot grill on high heat, 2-3 minutes per side until meat is opaque.

4. Rest for 10 minutes.

5.  Make sauce; combine all ingredients and blend.

5. Dress with sauce and serve.  Can be refrigerated and eaten the next day.
