The weather is beautiful outside today. Beautiful weather means outside, especially with these three boys. Our yard is 90% fenced in, so while I can run inside really quick to the kitchen (which has the door to out back) I need to stay out there so the toddler doesnt wander off. He knows to stay in the yard, but he loves doggies and has been known to walk next door to say “ruff ruff” to the neighbor’s dogs. We live on a busy road, so I dont want him out of my sight, or at least I want to be sure he is actually in our yard. This is why I love the slow cooker.



I have an old bottle that used to have bbq sauce in it that I cleaned out and filled with my paleo bbq sauce and just refill it as I run out. It is the perfect amount for making a slow cooker meal. What I love as much as a slow cooker doing my work for me is using it to breathe new life into leftovers. I made baked chicken earlier in the week, no sauce, and am using them to make pulled pineapple bbq pork tonight. Once they are covered with the sauce and re-cooked, they are like a completely different chicken, and nobody is whining about having leftovers! This works equally well using raw chicken, so if you dont have leftovers around you can still make it!

Ingredients

18 ounces bbq sauce

1 cup pureed pineapple

2 pounds chicken breasts

Instructions

layer chicken breasts in the bottom of slow cooker.

mix bbq sauce and pureed pineapple together, and pour over chicken.

cook on low 6-8 hours, and then remove chicken and place on a cutting board. shred using 2 forks, and return to the bbq sauce.

enjoy!
