There comes a time every year about this time where there is no sun in my kitchen. Mid-October is when the Fall season starts to fail me and mock me and leave me with zero natural light.

This was the week that that happened, so I was forced to use the light in my kitchen and be left with some not so stellar yellow photos.

But I guess since I’m talking about it, step-by-step yellowish pictures are better than zero pictures, so you’re welcome?!

Also, I did incorporate a cheeseburger into a casserole, sooooo that’s awesome.

This is the kind of recipe that floats around the internets all the time. So much so that I saw it on Pinterest and thought “ya know, I bet that’s sort of good” so I made it and indeed realized that it is good {and even better when you double up on the cheese…not that I’m speaking from experience or anything.}

Ahem.

Anyways, this is a great family-friendly meal that will fill tummies and make your kitchen smell great. A perfect Fall-weather recipe

Here’s how to make it:



Start by browning some ground beef in a little olive oil over medium heat.

Once it’s browned, add in some onions and garlic. Yum yum!

Once the onions are tender, add in a 28 oz. can of tomatoes. I used whole tomatoes that I broke apart with my spatula. Using just a can of diced tomatoes would be the easier option. But, at the end of the day, tomatoes are tomatoes. Use what you have!

You should also be cooking some pasta too. I neglected to mention that at the beginning. Oops.

COOK SOME PASTA!

I’d also like to point out that I added some spices and ketchup to the sauce to give it a *leetle* more cheeseburger flavor. All of these are optional. Use what you have on hand. This recipe is really versatile

Stir in your pasta to the sauce to coat and dump into a 9×13 baking dish.

Add in some cheese and bake!

After about 10 minutes, you’ll have a lovely, cheesy, delicious casserole!

Cheeseburger Macaroni Casserole

Yield: 4-6 servings
Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes

Ingredients:

1 lb. short cut pasta

2 tablespoons olive oil

1 lb. ground beef {90/10}

1 small onion, diced

2 cloves garlic, minced

28 oz. can san marzano tomatoes {or diced tomatoes}

1/2 cup ketchup

1 teaspoon ground mustard

1 teaspoon dill

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

pinch red pepper flakes

salt & pepper, to taste

2 cups grated colby jack cheese

Directions:

Preheat oven to 350 degrees.

Bring large pot of water to boil. Start cooking pasta.

In a large skillet, heat olive oil over medium heat. Break apart meat and continue cooking until browned. Add in onion and garlic and continue cooking 3 minutes or until onions are tender. Stir in tomatoes and break apart to create a sauce. Measure and stir in ketchup, mustard, dill, garlic powder, paprika, red pepper flakes, salt and pepper. Simmer 5 minutes.

Drain pasta and stir into sauce to coat. Pour into 9x13 casserole dish. Stir in half of the grated cheese and top with remaining. Bake 10 minutes in hot oven, then remove and serve immediately.

**All seasonings are optional. Add in what you have on hand or what you think your family would like! I added these particular seasonings in because it's what I had on hand! This is delicious made lots of different ways.
