I rarely have time to bake and with the summer heat wave that we’ve had there hasn’t been much motivation to turn the oven on.  Last week the stars aligned in my kitchen that helped me use up items in my pantry while creating a special birthday treat for Taylor, my right hand gal at Kuzak’s Closet.

I was about to throw a few overripe bananas in the compost bin when it dawned on me that I should turn them into something great like a muffin or bread. I’m happy when those creative moments hit my mind, it was as if my Pinterest account was feeling neglected.  I love searching for what I need via images instead of text so when I spotted a recipe for dark chocolate banana muffins from Fork Knife Swoon it sounded perfect. Chocolate with fruit means it’s healthy right? I had everything in my pantry already and there is nothing easier than mixing everything in a bowl with a few whisks of a spatula and throwing the batter into muffin tins.

Speaking of muffin tins, aren’t these adorable?



They have been in my pantry waiting for a special occasion.  I found them at The Container Store awhile back…



I originally tried to put them in my muffin pan and it just wasn’t working.  That’s when I decided to read the directions and found out that you don’t need a muffin tin, just a baking sheet to place them on.  This is when the stars alined for me… no cleanup, everything was in the pantry that I needed, and I was repurposing the overripe bananas, success!

Additional victory was made when I realized that Taylor’s birthday was the next day and I could bring them into work for a special surprise.  I matched them up with a birthday coffee and some sunflowers, the perfect combination.

Taylor isn’t a big fan of celebrating her birthday so the special goodies were just enough to make her feel special without feeling singled out.  We enjoyed the dark chocolate banana muffins while we priced last week’s Teak-Tastic estate in Los Altos, it was bliss. I was reminded that I need to get back in the habit of baking this fall!
