Being a girlfriend of a bodybuilder for more than 8 years now, I have already known and mastered Mark's needs especially when it comes to food. I enjoy cooking and I love to cook especially for my loved ones, and that of course includes Mark. I know how strict his diet is but that didn't stop me from cooking for him. Thank God for off-seasons from competitions, Mark can get to enjoy my home-cooked specialties. :D
Whenever Mark comes over our house for a visit, if my dad's not around, I make sure to prepare something that will surely satisfy his big appetite. I also see to it that I prepare different dishes for him for his every visit. I already cooked Kare-kare for him before, so that's definitely out of the list. I knew how Mark loves to eat chicken so I decided to cook Chinese-style Roasted Chicken for him when he paid me a visit at home a few weeks ago. :D
I actually learned this recipe from my dad. It's basically roasted chicken with soy sauce plus star anise, where the distinct Chinese herb taste comes from. :) I have already perfected this recipe and so whenever there is roasted chicken in the menu in our family feasts, I am always tasked to cook it. Here's one simple yet delectable recipe that I'm sure you'll enjoy just as how my family and Mark did. :)
Chinese-style Roasted Chicken

Ingredients:
2 whole Magnolia Fresh Chicken
6 pcs calamansi
6-7 pcs star anise
6 tbsp soy sauce
6 tsp sugar
ground black pepper
Preparation and Cooking Procedures:
Wash chicken with running water and set aside.
Juice the calamansi and set aside the peelings.
In a clean bowl, combine calamansi juice with soy sauce, sugar, a dash of black pepper, and star anise. Mix well.
Stuff each chicken with the calamansi peelings. Place chicken in a bowl, add in the soy sauce mixture, and marinate for 30 minutes. For a tastier chicken, you may marinate the chicken overnight.
Put the chicken in a turbo broiler. Make sure to set aside the marinade as we'll use that for our gravy.
Set heat level to 210°C and cook for 30 minutes. Flip chicken over and cook for another 30 minutes.
*** Chicken may be cooked in ovens or rotisseries. Pre-heat oven at 210°C and cook chicken for 30-45 minutes. Please do note that I still haven't tried cooking it in an oven so I'm not sure about the cooking time. :) ***
Transfer chicken in a clean plate, serve, and enjoy!
For our lunch that time, I paired the chicken with some buttered veggies and crab and corn soup. :D
For the gravy:
In a sauce pan over medium heat, transfer the chicken drippings from the turbo broiler. Add in the left over marinade that we set aside earlier. Add in 1 tbsp soy sauce and 4-6 tsp sugar (amount of sugar may depend on your preferred sweetness). Bring to a boil and add in 2 tsp cornstarch dissolved in water. Bring to a boil and remove from heat.
