I’m writing this a week later, freezing cold at my desk with rain pouring down outside. I miss the sunny bowls of breakfast and warm walks we took last week so much!! Spring is so slow to commit this year.

On the healthy living front, I’m feeling better than ever. Firmer, stronger, faster. I think paying closer attention to my diet lately has really started to pay off. Also soccer has helped me run faster!





I started the week off with a beautiful smoothie! This was a blend of berries, banana, milk, yogurt and ground flax. Served with a fluffy pillow of scrambled eggs shared with my boy.



Day 2 I had a fried egg, orange and toast. Cobbler Swirl toast. THE BEST!

‘Nother day, ‘nother smoothie! Berry + green smoothies get so much attention, but sometimes a good ole white smoothie is so good!! This was just yogurt, milk, banana, chia and a little sunflower butter but it was smashing. It was served with a slice of toast, but I don’t seem to have the photo!

Pancake day! Great Harvest mix plus sunbutter on top. Puddles! Much more exciting than the puddles that are forming outside my window right now…

And some oats – whipped banana with Barney Butter melted on top.

I had a lighter week of exercise because I kept Mazen home from the gym for a few days due to being under the weather from his croup + steroids. Luckily the fresh air was warm and sunny and we spent a lot of time enjoying it.

S: Easter Sunday 5 mile run with Matt and Mazen. I have no idea how, but my GPS said we were running sub-9 miles. That’s something I haven’t done for a long time! Come to think of it, running 5 miles at all is something I haven’t done in a long time.

M: It was nice to snuggle on the couch all morning instead of packing up and getting out of the house on time! I took M for a 3 mile walk late morning and I walked another 1.5 in the afternoon.

T: Took Mazen for a 4 mile run. Luckily the weather was great and M loves his stroller!

W: Met a friend for a 3 mile walk on the Monticello Trail. Lovely weather!

TH: Back at the gym for Kettlebells class. I have cardio endurance, but boy is weight lifting endurance hard! Those bells are heavy. We also walked to and from the gym.

F: Training with Erin + 20 minutes of ellipticaling + walked there and back.

S: Rest day. Just walked all around downtown and things. Too much fun to be had!

Leftover pizza on a salad! The salad was greens, avocado, dressing and blue cheese and the pizza was homemade cheese + shroom.

Another leftover salad – this time a half burger from our cookout I froze! Married with cheese, tomatoes, almonds, Bolthouse Greek Yogurt blue cheese dressing (loving lately) and crackers on the side.

Mazen and I went on a quick trip to Whole Foods and had a lunch date while we were there. I had a salad topped with hot bar stuff and the best Mediterranean pizza ever! I got it for M but he was more interested in what was in my box : )

You can tell this was the one day we didn’t have great weather. This was a split pea soup from a box that I supercharged with frozen peas, leftover chicken and broccoli. It tasted homemade when I was done with it! Yogurt on top, obviously.

And finally…salad topped with leftover pork, TJ’s honey almonds, fontina cheese, greens, blue cheese dressing and an apple on the side.

We took a break from Cook Smarts this week to use up some of the leftovers we had from Easter weekend and beyond.

Starting with this bowl of soup that was ready in 10 minutes flat!

We combined leftover rotisserie chicken with both fresh and frozen veggies (corn, green beans, okra) with broth, beans and rice to make a sunny soup! Topped with sriracha of course.

We dined outside while Mazen played!

Night 2 we used up the last of the Easter pork on BBQ sandwiches. We made some baked beans with leftover pinto beans I had mixed with tomato sauce, BBQ sauce, ketchup and apple cider vinegar, among a few other flavors. Salad to finish it off!

On our grocery store day I bought some fresh pollack and asparagus that we grilled side-by-side. The pollack was seasoned with blackening spice and the asparagus wrapped in bacon!! Turned out quite well. A Virginia roll was toasted on the side.

My go-to weeknight meal is spaghetti. We still have a dozen jars of our canned tomato sauce from last summer! I picked up some grass-fed beef to….beef it up…and we sautéed green beans on the side.

It felt like a special night so we opened some wine!! This guy is so cheap and juicy.

And this guy loves noodles!!
