You can make this Low-Carb Soup with Ground Beef, Green Beans, and Tomatoes in the Instant Pot, another electric pressure cooker, or on the stovetop and this tasty soup is also gluten-free, South Beach Diet Phase One and can be Paleo or Whole 30 if you omit the Parmesan.



Years ago I was introduced to the stovetop pressure cooker by a food blogging friend and I experimented with it enough to get a few good Pressure Cooker Recipes on Kalyn's Kitchen. Then my sister Pam and a couple of food blogging friends convinced me I should try the Cuisinart Electric Pressure Cooker, and I made several favorite recipes that were completely winners using it.

So when people started raving about the Instant Pot, I didn't think I needed one. If you're not familiar with it, the Instant Pot is a multi-function cooking device that can pressure cook, slow cook, saute, brown, steam, cook rice, make yogurt, and keep things warm. And there are probably other features I don't even know about yet! You see where this is going, don't you? After so many of my blogging friends and family members raved about how they loved the Instant Pot, I caved and bought one. So now I'm well-equipped in the pressure cooker department!

And then I asked readers on the Kalyn's Kitchen Facebook Page whether they'd like more pressure cooker or Instant Pot recipes and there was a lot of interest, so last week Kara and I experimented and came up with this delicious Instant Pot Low-Carb Soup with Ground Beef, Green Beans, and Tomatoes. We actually created this out of things we had in the fridge, and were thrilled when it turned out to be a keeper!

If you don't have an Instant Pot or other electric pressure cooker, I'll give suggestions at the end of the recipe for making this on the stove, and no matter which method you use, if you're looking for an easy low-carb soup you can make after work I bet you'll like this as much as we did!
