Now that we have Daisy, I'm even more motivated to recycle and save the planet.
But, I'm nowhere near the nouveau-bohemian tree-hugger type.
I'd just like to do my part to leave a good place behind for my child.

Soon, we'll be charged for plastic bags at the supermarket. We've
been using grocery bags as trash bags for years. Now, we'll use enviro-friendly reusable
canvas bags to carry groceries home, but will start purchasing plastic bags
for our trash.
Does that make sense?
Alright, I'll get off of my soapbox rant now.
Here's what I really wanted to tell you...
You know that mountain of yogurt, sour cream, ice cream plastic containers you're collecting above the frigo? My aunt calls it "Armenian tupperware."
It's food-safe, high quality plastic, perfect for freezing leftovers or
carrying food to your next picnic.
And now, that li'l sour cream container qualifies as a kitchen gadget:
The Coater
No, OXO doesn't make one...neither does Chefmate.
But, Knudsen does.
It's just what you need when making truffles. Put whatever you're going to coat
your tuffles in there (eg, cocoa powder, p. sugar, ground pistachios, etc),
then drop the li'l darlings one by one.
A couple of flicks of the wrist and you'll have beautifully coated truffles!
Who said recylcing couldn't be decadent?
Here's how:
Coconut Rose Pistachio Truffles
Adapted from Cook Republic's Rose Petal Coconut Fudge
Ingredients
1 cup coconut
1 cup sugar
1 stick butter
1/4 cup pistachios, grounded
a few drops of red food colouring
Method
Let butter rest until soft at room temp. Grind pistachios in a coffee grinder, blender, food processor. If you don't have any of these gadgets, put them into a sandwhich bag and give them a good bash with the bag of a small pan. (Cheap therapy, too!) Pour the pistachio grinds into that old recycled plastic container and set aside.
When butter is soft, mix all the ingredients and set the mixture into the fridge to chill for about an hour. Then shape them into li'l balls, toss them into the pistachio grinds, twirl about to coat evenly and gently set onto a cookie sheet. Chill the shaped truffles for another hour before serving.
You, on the other hand, should taste one right away....you know, quality control. ;)
