Raise your hand if you have had kale at least twice in the last month. It seems for the past year or so kale is everywhere!

And why shouldn’t it be? Not only is it fabulous for you, kale is SO versatile – you can enjoy it raw, massaged with some oil and seasoning or sautéed with garlic and bacon (my favorite). I have even stuffed and grilled flank steak with kale and bacon with incredibly delicious results! Heck,  you can even enjoy it as a chip! Have you tried it? Have you made kale chips at home? Kale chips are not difficult to make, just a little messy & time consuming to fry, especially if you are making a decent sized batch.

When Jo-Lynne and I were approached to try out the flavored kale chips from Simply Kale, a small company who offers line of flavor-packed kale chips, we were both intrigued. I myself had not tried (or actually come across) kale chips that were ready-to-eat. We were sent 4 varieties to try: Sea Salt, Sesame Seed, Sour Cream & Onion, and my favorite, the Chile Coconut Lime.

Simple Kale Kale Chips are just that – Simple…No added fancy items like cheese or chocolate to smother the goodness of the kale, thus defeating the purpose of eating healthy. Simply Kale’s chips are BAKED, not dehydrated, and are only seasoned with natural ingredients and spices to add flavor. My family and I enjoyed ourselves as we tried out the flavors, and we all agreed that the crunch of each and every chip is completely addictive!

I was running out to a Coach Bag Bingo fundraiser Friday night to benefit my children’s school and decided to throw together a few smackerals of goodness to bring for our table – I thought of the kale chips, looked in the fridge, saw a brick of feta cheese and my mind went to combining the two. The result was a flavor-packed dip that was popular at my table – not a speck was left in the bowl by game 9!



I now have a new staple dip that is made easier with the addition of Simply Kale’s Sour Cream & Onion Kale Chips. A few asked me how I cooked my kale for the dip, because they thought it was so light and not chewy at all – when I told them my “secret”, they were excited to get some kale chips for themselves.

Oh and guess what?? Little ‘ole me won the “special” bingo coverall and walked away with a shiny new red patent leather Coach bag and wallet! Whoohoo! However my longing to finally yell BINGO at a bingo is still not over – but THAT is another story!

I love a couple of things about this product, first the ingredients…simple and straightforward. The other thing I really like is to know that I can easily transform soups, salads, dips and more by just grabbing a package of whichever flavor kale chip fits the bill. I know I am not alone when I say finding products that save me time and/or money in my kitchen without compromising on taste or how I choose to feed my family is something that always makes me happy!

Check out this sweet potato – all I did was bake a few of them for dinner, allow them to cool a bit, scoop out 75% of the innards, add a bit of butter, brown sugar and cinnamon, place the mash back into the shells and top them with the Sea Salt Kale Chips, and instantly the texture of the sweet potatoes were changed and the side was elevated. The addition of crunch without adding sugary nuts was a winner for me and my family that night.

Creamy Feta & Kale Dip



Ingredients:

1-2 cloves of garlic

1/4 cup mayonnaise

1/2 cup sour cream

1 TBS grated lemon peel

1 TBS fresh lemon juice

2 TBS honey

8 oz brick of feta cheese, crumbled

a few dashes of red pepper

a dash or two of salt & pepper

2.5 oz Kale Chips

Instructions:

Add your garlic clove(s) to your food processor and pulse until minced.

Add in mayonnaise, sour cream, lemon peel, lemon juice and honey and pulse until combined.

Add in your feta and pulse once or twice...just enough to incorporate it but still leave some feta chunks.

Scrape into a bowl and add in kale chips, red pepper and salt & pepper according to your taste. You can serve this immediately or cover, chill and serve later.

Serve with pretzels, pita crisps, carrots or your favorite crackers.

Notes:

Depending on the size of your garlic cloves, your taste for garlic (I love it) and the strength of the garlic you have on hand, you can add 1 or 2 cloves to this recipe.
You can substitute Greek Yogurt for the sour cream.
Add more or less red pepper (Cayenne) depending on your preference for heat.
If you do not have a food processor, mince your garlic and add in the next 5 ingredients, mixing well. Crumble your feta and mix until incorporated. Add in the seasoning and kale chips, stir until mixed in. Enjoy!
