Overview:
The primary role of the Quality Assurance Director is to oversee and maintain all food safety and quality control/assurance programs at both Malcolm Meats’ locations, while ensuring compliance with all corporate, local and national regulatory guidelines.

Responsibilities:

Oversee / conduct daily pre-operational inspection and monitor pre-operational inspection reports.
*
Assist in keeping the facility constantly in a ready state for USDA and AIB Audits. Coordinate and facilitate all sanitation and food safety audits.
*
Ensure processes and facilities are monitored to meet SSOP and GMP guidelines.
*
Check raw materials, manufacturing processes, plant environment and finished products for established formulations and specifications. Thoroughly investigate all complaints.
*
Compile statistical data, reports, summaries and audits.
*
Complete and report daily, weekly and monthly quality control inspections and testing. Submit requested reports to corporate.

Oversee QA Technicians in performing analysis on raw materials, work in progress and finished product to ensure both company and customer specifications are being met. Ensure that QA Technicians are measuring quantifiable attributes of the product (weight, tail length, tenderloin diameter, etc.), as well as making subjective decisions on the general appearance of the product. Track daily observations.

Complete monitoring and documentation of HACCP, Raw Material Log, Held Product Log.

Determine product non-conformance and determine, through communication with department managers and supervisors, the appropriate disposition for non-conforming products. Determine timely loss estimates on any defective raw materials.

Review and maintain safety documentation to include metal detections logs, shipping and receiving logs.
*
Perform monthly environmental micro testing.
*
Perform Weekly calibrations.
*
Procure label approvals from USDA as needed.
*
Oversee/Direct daytime sanitation team for thorough completion of all cleaning tasks assigned. Modify tasks as business needs dictate. Generate master cleaning schedule.

Provide technical support to operations as needed.
*
Perform GMP training for all employees.
*
Develop strong partnership with management team, USDA Inspector and corporate liaisons.
*
Assume responsibility for additional tasks as requested.
Qualifications:
*
Bachelor of Science degree or equivalent work experience
*
SQF Practitioner/or SQF audit experience helpful
*
3-5 years related experience, preferably food industry
*
Knowledge of safe food handling, GMP's, Food Plant Sanitation, HACCP.
*
Technical knowledge of laboratory techniques and knowledge of laboratory equipment.
*
Computer literacy: Intermediate level spreadsheets, word processing, statistics and internet.
