Brussels Sprouts and Lemon Risotto
Easy dish that’s sweet-ish and slightly earthy. Combines thinly-sliced plumped dried figs, thinly-sliced Brussels sprouts (food processor slicer or mandolin good here), sautéed onion, lemon zest/juice with grated Parm, chopped parsley and s&p. Making risotto involves adding hot liquid to rice, stirring until it’s absorbed (a few minutes) and repeating until rice is done. Recipe serves 6.
