Flavorful Creamy Chicken Curry
Using a wok or high-sided frying pan, cook onion, garlic, cumin, turmeric, curry powder, red pepper flakes, salt, tomato paste, 1″ raw cubed chicken breast pieces (or add in leftover rotisserie chicken toward the end). Pour in coconut milk to make creamy consistency. At service sprinkle with cilantro/squeeze of lime and spoon over rice. Comments say increase tomato paste; add frozen peas, cubed sweet potato (sauté with onion), chopped zucchini/broccoli toward the end, coined carrots, chickpeas, spinach, chard, drained canned roasted tomatoes or other veges. Also can sub fish chunks for chicken. Easy and tasty.
