Combine well mashed (over)ripe banana, applesauce, cinnamon/nutmeg/ground ginger/salt, brown sugar/maple syrup, vanilla extract, old-fashioned rolled oats, dried cranberries/raisins, chocolate chips, nuts, unsweetened coconut. Eliminate components you don’t like and add what you do. After coating a 24-cup muffin tin with non-stick spray, firmly press about 1 T mixture in each cup.
