Comments say “a keeper.” Suggestions to par-boil cauliflower a few minutes longer, bacon is easily substituted for pancetta, red pepper flakes can be decreased or eliminated, remember to remove the garlic clove before serving, the generous amount of sauce would be good on pasta, reduce flour by a couple of T for a less thick sauce, add diced ham and/or small broccoli trees. After par-boiling cauliflower, pour your garlic/pepper flake roux mixed with Parm/s&p/nutmeg/pancetta (or bacon) over cauliflower in a buttered 9×13″ baking dish, sprinkle with bread crumbs and bake. A tasty way to serve cauliflower.
