So versatile! This is like a vegetable jam to be eaten on toast, bagels, as a chip dip, as pizza topping (with fresh tomatoes/cheese/fresh basil), over pasta, as a condiment with a dry-ish entrée, in soup, in or over meatloaf/meatballs; can be cooled and frozen in usable portions. Frozen blended zucchini milk cubes (optional onion/garlic) can be used as up to 1/2 the liquid in cakes, pies, pancakes/waffles. Coarsely grate 2 lb zucchini (or any summer squash), sauté about 15 min with olive oil/butter and garlic/shallots incorporating fond (delicious brown bits) until slowly caramelized.
