Fall means football. With three boys in our house, that means every Sunday afternoon there are football games playing nonstop.  It doesn’t really matter who is playing, although they love to watch the Bears play as much as they can.

Now, my husband usually falls asleep on the couch while the game is on, and the boys get distracted about halfway through with their video games. My daughter and I will try to change the channel to a more girly option, but my husband will wake right up and tell you that he is still watching the game.

The guys definitely rule the remote on game days.



Football also means parties and lots of good food to eat.  I say bring on more game days if that means we can snack on food all day long and have friends over.



One of my favorite dips to make for our football get-togethers is the Famous Queso Dip. This creamy and delicious dip is made with just two ingredients in just minutes.   VELVEETA & RO*TEL diced tomatoes with green chilies melt down to create an incredible dip that will disappear from your party table right away.  I would call that party food success! Although this two-ingredient dip is amazing by itself, there are times that I like to add a twist to it for our party guests.

Today you get a fun treat…I made you a video showing my favorite way to change up our queso dip.  Check it out, and then leave me some feedback.  It is my very first time incorporating a video, and I am feeling way self-conscious. Please be nice.

I was so excited about making this new, delicious dip, that we devoured two batches of it in less than 24 hours.  My hungry boys just couldn’t get enough of it.

If you are hosting a football party soon, definitely think about serving the Famous Queso Dip to your guests. Or go ahead and jazz it up with some chicken and veggies like I did.

To incorporate the flavor of chicken fajitas into the queso, I sauteed some onions and peppers in olive oil until they were soft. I cheated slightly on the recipe by using some store bought rotisserie chicken that we had left over from the night before.  After the veggies were cooked, I added the chicken and a few tablespoons of fajita mix. This chicken mixture was then added to the creamy queso dip.

Our favorite way to devour this dip is by serving it with a sturdy chip that will hold a healthy scoop of dip.

No wimpy bites here!

Chicken Fajita Queso Dip

Prep Time: 15 minutes

The two ingredient queso dip gets a fun twist when fajita chicken is added. It is perfect for any football party.

Ingredients

2 Tablespoons olive oil

1/2 cup diced green pepper

1/4 cup diced onion

1 cup finely chopped cooked chicken

3 Tablespoons fajita seasoning mix

1 pound Velveeta cheese, cubed (16 oz.)

1 can Ro*Tel diced tomatoes with green chilies (10 oz. undrained)

Instructions

Heat the oil in a skillet on the stove top. Add the diced peppers and onions and cook until tender. Stir in the chicken and fajita seasoning. Set aside.

In a large sauce pan, combine the cubed Velveeta and the entire can of Ro*Tel tomatoes. Heat on medium heat until creamy. Stir in the fajita chicken mixture. Serve warm with chips, crackers, or fresh vegetables.
