Chocolate Peanut Butter Covered Popcorn

Happy Saturday! I hope you are enjoying your weekend! Are you running around like crazy trying to finish your holiday shopping like me? haha I hate leaving this to last minute, but this year has been insane! Ah well, instead of focusing on that let’s focus on this yummy recipe!

As my long time readers know, the 21st of the month is one of my favorite days because it is the submission day for the monthly Recipe Redux challenge. So I am very excited today!   For those of you who aren’t familiar with Recipe Redux it is the first and only recipe challenge founded by registered dietitians. The Recipe ReDux is focused on taking delicious dishes, keeping them delicious, but making them better for you. It was founded by 3 amazing dietitians with a belief that healthier eating should always taste delicious. And let me tell you, I totally agree! This months challenge was to create a recipe that would bring ‘good luck’ for the new year and start off 2014 in a healthy way! I know once the holidays have passed that I still have a tendency to want to snack…and my sugar cravings are still lingering a bit too! So i decided to share this recipe with you! It is protein packed, low sugar, high fiber, super easy and delicious too! It is the perfect recipe to bring along to that New Years Eve or New Years Day party! I hope you enjoy!

Fit Ingredients

3/4 c (192g) Chocolate Peanut Butter Nuts N More

1 tbs (14g) coconut oil

18 c popped popcorn (I used this one)

6 tbs (42g) unsalted peanuts

Directions

1. In a bowl, melt your Nuts N More and coconut oil.

2. Gently toss your popcorn until well coated.

3. Spread on a baking sheet and allow to set in the refrigerator.

4. Put popcorn in a plastic container and add peanuts.

5. Put the lid on the container and give the popcorn and peanuts a toss.

6. Serve!

7. Store in a sealed container.

Chocolate and Peanut Butter??? Need I say more? Plus, there is only 1 gram of sugar, 4g of fiber and a dose of healthy fats! This definitely will satisfy that salty/sweet craving in a healthy way!
