Delicious and healthy Creamer potatoes are tossed with Spring vegetables for a gorgeous side dish.



I am so very excited to be sharing my first post as a brand Ambassador, for The Little Potato Company! I first had the opportunity to try these gorgeous Creamer potatoes back in December. I instantly fell in love with the ease of use of these potatoes and how delicious they are. Not to mention they are super cute, and who doesn't love a cute potato??

You are probably wondering why I am so excited about these potatoes right? Well first of all, these are fully grown, mature Creamer potatoes. That's right, they won't get any bigger! Where as other tiny potatoes found in stores are babies, immature and still have a lot of growing to do. What's the difference? The taste! These Creamer potatoes are fantastic! So creamy and silky, with thin skins, so no need to peel and even chop. And they all cook evenly too! Check out this video, full of awesome facts about these cute Little Potatoes.



The Little Potato Company specializes in Creamer potatoes, which come in several different varietals, and are available across Canada and the U.S. You may remember the Gratin I made using the beautiful Something Blue varietal, back in December. This time I really wanted to try the Microwave Ready varietal. These are perfect for busy weeknights, or for people who can not cook elaborate meals for themselves (like my mother in law). Just pop these into the microwave and 5 minutes later you have perfectly cooked potatoes, which you can season with a provided seasoning packet. You can't get any easier than that, in my books!



With the snow melting and warmer temperatures teasing us for a few days, I wanted to create a dish with my Creamer potatoes, that made me think of Spring. While the potatoes were cooking in the microwave, I quickly sauteed up some Spring veggies and tossed in the cooked Little Potatoes and seasoning packet near the end. The result was a lightening quick side dish, that tasted amazing! My Mom and the kids inhaled these potatoes and veggies. The seasoning paired well with the creamy silky potatoes and tender crisp veggies, while not being too overwhelming. Easy and delicious, those are very important words, when in the kitchen and Little Potatoes make it happen!

Spring Medley Creamer Potatoes

1- 1 lb package of Savory Herb Microwave Ready Creamer potatoes

2 Tbs olive oil

2 Tbs butter, divided

1 bunch of thin asparagus spears, trimmed and cut into 1 inch pieces

15-20 small brussel sprouts, cleaned, trimmed and cut in half (if you can't find small, cut them into quarters)

1/2 of a large red pepper, cut into strips

1 small onion, peeled, cut in half and sliced

2 large cloves of garlic, peeled and minced

Cook Creamer potatoes according to package directions.

While Creamer potatoes are cooking, preheat a large skillet over medium high heat. Add in olive oil and 1 Tbs butter. Once butter begins to bubble, add in the onion and peppers. Toss to coat and cook 1 minute. Add in remaining vegetables and garlic and saute, tossing frequently for 2 minutes. Reduce heat to medium and cover skillet. Let vegetables cook for 4 minutes; until brussel sprouts are tender crisp.

Carefully open the Creamer potatoes and place them in the skillet, along with the provided seasoning packet and remaining 1 Tbs butter. Toss to coat and serve.
