Embark on a culinary journey of authentic flavours from the subcontinent in one of London’s most gorgeous dining rooms as pan-Indian restaurant Baluchi at the Great Hall throws open its doors on 27th January 2017.
Already an award-winning, well established brand in India, where it graces many of the luxury hotels owned by The Lalit Suri Hospitality Group, the 88-cover Baluchi will take pride of place in the group’s first overseas property, The Lalit London.
A glorious addition to the hotel, Balcuhi will be a destination restaurant in its own right. Against a dramatic backdrop of wood panelling, soaring vaulted ceilings, bespoke handmade cobalt blue chandeliers and Indian furniture, tapestries and mirrors, guests will enjoy dishes from Kashmir, Bengal, Kerala, Goa, Rajasthan and Delhi, all prepared from the finest ingredients and based on recipes handed down through the generations.
Brilliantly talented executive chef Arup Dasgupta, who has travelled the world perfecting his craft, has created a menu the like of which London has never experienced before.
Set to become signature fare are such exotic and vibrant dishes as Paan ki Biryani (basmati rice with vegetables, betel leaves & rose petals); Phalahaar (melon, blood orange, pink lady, fresh figs, grapefruit, carom seeds & honey dressing); Suroor e Shorba (Keralan style lobster bisque, coconut & cognac); Gilafi Pheasant Ki Seekh (minced pheasant breast, peppers, chicken liver rillettes & crushed fenugreek crumble) and Teen Ka Meetha (carrot fudge, salted chilli chocolate marquise & cardamom brûlée).
Rare indigenous ingredients such as home ground spice blends, therapeutic herbs and Kashmiri Gucchi mushrooms from the Himalayan foothills are paired with more local, but no less exotic, fare like Cornish Exmoor caviar and cuts from the Cambrian Mountains in Wales.
Baluchi’s beverage menu is equally compelling, with its comprehensive list of fine wines, champagnes and cocktails. And with another nod to its heritage, diners can even pair their dishes with a vast selection of teas from the Tea Lounge of The Lalit Great Eastern Kolkata.
This spectacular dining room is not the only area of Baluchi where guests can indulge all their senses. Bread bar The Naanery is a unique concept whereby a tandoor is used to prepare a selection of artisan Indian breads. Sit at the bar area and savour these delicacies straight from the oven, paired with a selection of wines handpicked by the head sommelier, Charles Donnadieu.
Meanwhile Baluchi’s gallery, with its stunning views over the dining room, is set to become the go to destination for afternoon tea in London. A traditional English offering will be complemented by Baluchi’s own take on the tradition, featuring Bangla Scotch egg with fiery kasundi relish, Punjabi samosas and kachori, a flaky, crisp, deep fried pastry filled with spiced pea filling.
Finally, there is Baluchi’s beautiful 32-cover terrace designed by The Lalit group’s longtime collaborator, Parisian landscape artist Olivier Vecchierini. Here guests can enjoy dishes from both the restaurant and the bar menus surrounded by dramatic topiary creations and Indian stone sculptures.
