March 2014 saw Tom Langdon appointed as Head Chef at Bermondsey gastropub The Garrison, a part of Village London restaurant group.

At the kitchen’s helm, Chef Langdon will oversee the menus for the 62 cover dining room and 25 cover private dining and cinema room. Adopting an increasingly contemporary British farm-to-table approach to the food offer, Langdon looks forward to evolving the restaurants’ culinary programme, while continuing its commitment to thoughtfully sourced, high quality and honest food, for which it is already celebrated.

Langdon joins The Garrison following experience working as Chef de Partie at The Savoy (2006-2007), Chef de Partie at Bord’eaux & JW Steakhouse at the Grosvenor House, Junior Sous Chef at The Gun, ETM group (2010-2012), and most recently Head Chef at The Red Lion (Antics Pub Group). Examples from Chef Langdon’s newly introduced spring menus include:

Bocconcini, walnut crumb and artichoke dip

Warm octopus & potato salad, smoked paprika vinaigrette, seaweed salsa Beef sirloin carpaccio, pickled rhubarb, radish, Oxford blue cheese, watercress

Slow cooked outdoor reared pork cheek, garlic creamed potatoes, baby carrots and fennel, peanut spring greens Seared rump of salt marsh lamb, spinach, grilled artichoke, nutmeg, dauphinois, kidney jus

Blood orange caramel

Isles flottant with butterscotch and apple

Langdon is the 2014 winner of the annual Princess Victoria Pork Pie Off, winning both the chef and consumer vote for Best Pork Pie, beating stiff competition from established chefs such as Henry Harris (Racine) and Peter Weedan (Newman Street Tavern).

The Garrison was created out of a desire to address the needs of the local creative community throughout the day and night. In 2003 The Garrison opened as a gastropub serving a rustic, seasonal menu, plenty of daily specials and celebrating local produce from artisan suppliers. It quickly settled into the rapidly developing Bermondsey Street, in Southwark, and continues in its success attracting both locals and international visitors ten years on.

The Garrison was the first venue to form the Village London restaurant group co-founded by Clive Watson and Adam White. Additional sites include Village East, also located on Bermondsey Street, (re-opened following an extensive refurbishment in September 2013), as well as wildly popular The Riding House Café in Fitzrovia.
